I've looked around the forums and guides and have yet to find how I can fire on two, separate, targets, both of which I can lock on.
So, how do I fire on two different targets?

Highlight target 1, press F1 F2, highlight target 2, press F3 F4.

Also can't be done if you grouped all your weapons.

This. Might be fun to make two groups of weapons though if you find yourself in a ship that for whatever reason spreads fire a lot, like say if you're in an arty ship and tend to instapop things with 1-2 guns (don't think this will come up, but you never know). You still pretty much maintain the main advantage of grouping - quick ammo swap; changing two groups doesn't take much longer than changing one, it's when you're trying to do it for 5-6 guns with 4 different kinds of ammo in the hold in the middle of combat that it gets hairy. __________________________________

Everyone knows that to be a pro KM ***** you have to have unlinked guns so you can put one on each target.
You don't help your gang and you do **** all damage but at least you get to artificially inflate your e-peen KB stats.
And that's all that matters in EVE

if you ahve more then one gun on your ship, but only one gun appears on your module buttons, with a little red number in a corner, they are grouped.
and no, its not done by default.
so, to fire on two targets, assuming two or more weapon systems.
target two ships. ]
select one by clicking on its target icon at the top of your screen.
fire a weapon at it, and leave the gun running.
select the other target icon by clicking on it.
fire your other gun at it.

most mining ships can only target 2 or 3 targets at once.
Target asteroid, click mining laser.
Target rat, click on weapon shoot until dead.
Target additional targets if necessary.
If you've locked several asteroids for mining you may have used all your target locks so you'll have to "unlock" an asteroid first then lock an enemy.
Best is to just get some drones and a shield/armor repper.

Not really a good idea. You can lock em both up but concentrate your fire on only one target at a time. Splitting your fire, unless you are facing underwhelming odds, usually turns out bad for you. You want to reduce the amount of damage you are taking and to do that you need to eliminate the targets fast. You eliminate them fast by concentrating fire power on one target at a time.
The only time I would split fire would be if the guy had drones out. Then I would only use my drones on his drones and still shoot him with my guns and/or missiles.

i have one suggestion friend, get some attack drones, you'll be safe from rats and you can get alot more mining done,
