I was looking at the different career paths. The more I look at this military enlistment options, the more I lean towards it. Simply because I want a cruiser that could be just unstoppable. I'm still relatively new to this EVE world so any recommendations would be appreciated.

Welcome to EVE. After the first few hours, the tutorial missions, it's up to YOU which way you go. No choice is objectively better, none is worse, just check the descriptions of skills you're thinking of training to see if they do what you think they should do...
It's a LARGE universe out there, all of it is yours if you play your cards right. Best possible advice for whatever you wanna do: Join a good player corp. Check recruitment threads on this forum and adverts ih-game.

I haven't played with the latest revamp of character creation, but in the long run it really doesn't matter what you choose.
You can choose to train whetever you want, whenever you want. There's nothing to stop you from training another race's ship-class. You could decide to start off as miner, and change to training for combat-related skills an hour later. It's as simple as buying the skillbook(s) you want.
Don't sweat it out, if you think you've made the wrong choice - 'cos there is none.

Nothing is unstoppable - but if you know what ship your looking to excel in, a lot of focused training in skills relevant to that ship can never go wrong.

Welcome to Eve :)
One of my favorite parts about the game is your ability to make a career out of almost anything and a career is necessarily how you make money. I'm a pvper, a mission runner and explorer but I think what I really consider my career to be is a corporate recruiter.
It's really wherever you can carve out a spot for yourself, wherever your skills (real life and ingame) are. Dabble in everything, don't be afraid to try anything and push yourself whenever you can.
