You can setup your ship to escape. You can mine veldspar in highsec and probably make more money when you take into account the ships you don't lose. You can fight back.
It sounds to me like you want to pick the last option. You understand that your skills are not up to par with likely pirates. That's great. People have already explained that flying a bigger ship with weak skills only makes you a juicier target, and it looks like you understand that too.
Again, great. Now if you're serious about fighting back, you're going to need to train your skills. Train all of the relevant combat skills to either level 4 or level 3, with engineering and electronics both trained to V. It shouldn't take that long. Research how best to fit your Vexor for PVP. You will probably want a strong buffer, since an actively-tanked cruiser is probably not going to hold up that well against a player with better skills. Your tank will break and you will crumble.
Instead, fit a 1600mm plate, a damage control, two energized adaptive nano membranes, and small guns (blasters) in the top. Fit a warp scrambler, a web, and a MWD. Frigates will no longer be an issue for you, and pilots in many cruisers will be fair game.
Carry your mining drones with you if you mine in your Vexor. Also carry five Vespa EC-600 drones. These are your "get out of jail free cards." If things are clearly not going your way, launch them.
Other tactical things: stay passively aligned to a station while mining. This is a better option than stabs. Simply align to a station, and stop your ship. If a bigger fish than you shows up, you can warp very fast.
Second, if you're in a Vexor, your primary DPS comes from your drones. So feel free to use your small guns to kill his drones, if he has them. He will probably do the same to you, so monitor your drones carefully and pull them when he starts firing on them.
Learn to use your scanner if you haven't already. Finally, make sure your overview is setup correctly. These last two are the most important things for any player just starting out in PVP to learn.
You also need to accept that you're going to keep dying. But when you know how to fight back, you'll enjoy doing it.
And if you really want to be left alone, you're going to need to find a quiet .5 in highsec.
