I've been mining around in empire space for about a month or so and I keep wondering about finding hidden asteroid belts. Is there a good method to find them? I assume they are worth looking for.

yup, get a core scan probe launcher, and some core scan probes, and go out and scan for them. theres a few good tutorials about how to scan with the new system, so its best you look for those first to know what you're in for :)

Hell, no. Don't bother. You can only find lowsec ore in hidden belts (I think gravimetric sites) in hisec and absolutely the best ore in empire (hisec and lowsec) atm is the veldspar. Why would you spend a lot of time finding something much (yeah much) less valuable than something which is already available to you everywhere? |

If you want to mine in relative peace they are nice for a change, you can find oodles of veld in grav sites as well and the roids will be untouched. |

Maybe he wants to be a real miner and not just a miner of Veld. Maybe he needs more materials than Trit because he's actually building stuff. Maybe he just wants to explore other aspects of the game.
On topic: The best guide that I found was here: http://wiki.eveonline.com/wiki/Exploration:_Apocrypha
It helped alot. As for the belts themselves, it's the luck of the draw. I've found small omber belts, and i've found huge belts loaded with kernite, Hemo and Jaspet. But if you want to be your typical veld miner, alot of folks are just doing missions until they draw something with decent sized rocks in it, not turning in the mission right away, and sending in their mining team to clean the place out.

I don't think I have ever seen veldspar in a hi-sec grav site. Loads of Omber, fair amount of Jaspet, some Kernite, and the occasional Hemorphite and rarely Hedbergite. Omber isn't worth mining, Jaspet is the single least valuable ore in the universe, and with the current mineral prices Hemorphite and Hedbergite aren't worth mining either.
As of two days ago, the most valuable hi-sec ores were, in order:
Veldspar > Scordite > Kernite = Plagioclase
Overall, Arkonor was tops, Bistot second, Mercoxit third, Crokite fourth, then Gneiss and Spodumain. Dark Ochre was barely more valuable than Veldspar ______________________________________________________ Isn't it enough to know that I ruined a pony making a gift for you? |

So, er, 'real miners' spend lots of time finding the least valuable ore that they can and then mine that? How peculiar.
High sec grav sites contain: Omber, Kernite, Jaspet, Hedbergite and Hemorphite. Base Omber can be worth mining, as can base Kernite in some regions as it is used in the MAterials for War Preparation storyline mission. Refining wise Kernite isn't too bad but Omber variants, Jaspet, Hedbergite and Hemorphite are all different flavors of horrible.
The best thing about finding them is that sometimes you can sell the sites to someone who doesn't know/care that they aren't worth mining.
You can find some Cosmic Anomalies that contain substantial amounts of veldspar, however these have the disadvatage that if you leave the site after killing the rats then the entire site despawns taking the roids with it. So you really need two accounts to mine them easily or, at the very least, a big enough tank to ignore the rats.

High sec exploration grav sites are not worth looking for. The mineral market is distorted so that mid-level mins are actually the least valuable.
You can use exploration to find wormholes, whose grav sites (hidden belts) have all ore types in them. I'd recommend you join a corp already in a wormhole if you're serious about mining though, the logistics to operate efficently inside a wormhole is considerable.
