Just started an alt for the first time, so this is the first time it's crossed my mind.
I already had a plan for my alt before I started him. Basically my main is a trader now, though I can do a bunch of things okay. So, I wanted an alt to be able to (1) Do things with while I'm trading with my main (2) Be closer to my corp/alliance mates while I'm out making the rounds with my main (3) kick butt a lot better than I can with my main. ;)
So I'm starting my alt with a bunch of learning skills, since I have my main to do stuff with. I took about a day with my alt to train skills to be able to salvage. Now he's already usable while I'm still training him for what I want; he can follow me around as I do missions, salvaging a room behind, or whatever.
Next I'm going to get those learning skills up to a satisfactory level, then give him the minimum skills needed to fly a Retriever halfway well so I can mine with my corp mates who like to mine while I'm away with my main. Then I'll put him on the fast pace for a BS. Eventually he'll be my combat char, or I can bring him and my main into battle and contribute more, and while my main is busy hauling I could put him on Level 4s, too.
So, what do you do with your alt and what paths of training have you taken for him?

Good luck then :) I like trading, it's fascinating, but i'm not good at it
Sorry for going offtopic. If i had an alt, by the way, i think i would make it a producer or a scientist, something like that :)

My main is a combat pilot (a poor one atm but getting better)
My alt is a miner/industrialist who's also become the CEO of my corp so I could go off and pew pew at R-V-B.
Basically the friend who got me into the game was trying to mine and I thought well this sounds like a fun way to play. So we each have a combat pilot and one alt who's miner focused.
I plan on training my alt up to be an orca pilot after he gets his hulk figuring I can solo mine in the hulk when my buddy isn't online and I can provide support and do away with jetcanning when he is.
ATM I'm mainly using him to provide logistics support for my mains activities in RvB, Mining, building ships and module as well as doing all my shopping since leaving the station on my main is a rather dangerous proposition (already lost one Vexor trying to do my own shopping).

Main = Soldier with very basic skills in most all other careers. Alt 1 = Inventor, Biulder, Drone Specialist, with very basic mining skills Alt 2 = Trader, Industialist Alt 3 = Explorer, Covert Op, with very basic mining skills
I will probably up my mining skills on all characters to see if I can mine 40mil ISK per hour someday...;-)
And over time, they will all cross over skill sets and I'll sell them off for mo money.
Then there are the other 8 alts whose only purpose are to spy on other regional prices for goods.

For PVP, frigates and cruisers seem to be the norm in my time zone. BSes only show up when you and a ton of people in your fleet (50-200).
If you want BS for missions fine but I'd focus more of T2 frigates and cruisers for pvp.

I have a main who is a combat pilot for both PvE and PvP.
My alt does R&D, hauling, mining, trading, and some minor production.

I wouldn't really say my characters are alts, since I play them both around about the same amount of time. One character erratically trains random skills to see what obscure things I can do out of it. Takes about 2-3 times as long to get useful skills in order but it's entertaining at times. It's a bit of an experimental character that mainly does missioning for money and randomly fit ships for PvP experiments to see what could/couldn't work.
This character is more refined in skill training with the current main focus of trade & transport. This one is a sort of character that trials different professions so I train a single skill group every few months and try not to deviate.
I have a 3rd one, but haven't been on it for about 6 months. That one was a nullsec roamer and sort of diplomat.

I started my alt with two weeks of learning skills, and I fitted a few skills in so he can salvage as I mission, or haul when I mine. Then I'll go full blast on the Battleship combat skills.

My alt went mostly indy, then salvage/logistics.
I usually have him following along in a salvaging Drake with a cap transfer array, target painter, heavy launcher, light drones and a web while I fly a sniper Maelstrom on this character for missioning.
Basically anything I don't 1 volley on it's way to me, I let my alt take out then salvage the wrecks as I go. I dropped cap stability for more firepower, so if I start running out of cap tanking I just transfer some cap from my Drake. I used to have him fit a cap transfer and a shield transfer array, but found it was just easier to drop the shield transfer array for a heavy launcher. The cap transfer can run longer so I don't have to worry about it much. Only problem is when I get focused on micro managing my tank and not realize my alt has half the room on him....

My main is a fighter (mostly battleships and tech 2 frigates) while my primary alt is logistics and command. I also mine and haul with each.
I've got a 2nd character on my main account that I plan to make into a trader, but I haven't gotten that off the ground yet.
It was easy for me when making my second account. I already had a combat pilot, and the natural compliment to that is fleet boosting and logistics.

My alt does the things that I wanted to train on my main but thought would be a waste.
My main can:
Fly combat ships, BS, T2 Ships (Recons, CS, HACS etc) Gas Mine
My alt can:
Perfect Refine Perfect Reprocess Perfect Build Fly Orcas Fly Freighters Fly Blockade Runners Gas Mine Is a POS gunner (Starbase Defense IV) Mine all ores Use Hacking Use Analyzing
I consider eve to be a $30 a month game, because my alt and main are attached at the hip.
They both support each other, and I couldn't imagine playing with only one account.

My main is a trader and now also a combat pilot. After 2-3 mil SP in trading you really won't have to dump too much time in it so you can skill up on other things you want to do. I use my other 2 characters on this account to check prices in 2 other regions so I know where I can make the most profit.
Three common things I see alts used for are hauling, recon and salvaging. |

Main - Amarr focused sub-cap pvp pilot (Me)
Alt - Industrial type/freighter pilot/working on carrier/dread and a couple lower sp trained characters on that account one for farming datacores (yay free spacedollars) and a market alt with various trade skills for making my spacedollars grow.
2nd alt - Use this for building characters up to 15-20m sp and selling them for billions of spacedollars. <-------------------------------------------------> "Only two things are infinite, the universe and human stupidity, and I'm not sure about the former." -Albert Einstein |

I have 3 characters:
My first one (my main, I guess) trains mainly for combat skills and now is heading for capital ships.
My second one started as a miner alt/helper PvP character (ECM skills etc) and due to the combat training has become mainly a missioning character, to fund the main, which is the path I'd recommend for a first alt (at least until they fix, i.e. nerf, high-sec missioning).
My third is offline atm, but it's basically an experimental character that I'm training on an optimal plan to see how many SP I can get in the shortest time possible, max skills for certain ships/setups etc, all very interesting (but not economically viable atm).
Hope that helps somehow.
