I have been puzzled since eve-markets.net has been showing trit at 3.00 for a while and most of the regions I have been in the last day or two had someone selling > 100k @ 2.5. Then this provoked me to brave the forums to ask about it.

I understand that something is worth [only] what someone is willing to buy it. But trit is the definition of a commodity. Nothing has higher volume. It's not race specific like missiles versus lasers. Yet there is more variation in the price than I would expect.
But at some point, you need to make a decision. I suppose immediate manufacturing is simpler - if you are going to manufacture at station X, then the only thing that matters is the price of the mineral delivered to X. But say you see 4,000 shuttles available in a location where you have perfect refining. What is breakeven? Re trit: Right now in Jita, sellers have about 300k @ 2.85 around the forge, Jita has 244m @2.86 and billions @ 2.87. There is a buyer of .55 billion @ 2.81. And two other regions I looked at today had people offering to sell it at 2.50. EVE-central lists a median selling price of 3.07 and buying of 2.30. I guess I don't see the value of median prices. If someone is buying .55 billion at 2.81 I don't see how adding some more at 2.3 is going to change much. But there is an argument that the above justify valuing trit at 2.5, 2.81, (2.81+2.85)/2, 2.86, 2.87 or @rnd. Given this information, what would you put into your spreadsheet?
There are more spreadsheets than people in EVE. And many of those need a single number for each mineral. What do people use?

I use either the lowest sell order or highest buy order, whichever is greater.

I usually use spredsheet that tells me value of ore before refining based on mineral values inputted.
As for values i use local hubs lowest sell order price - 0.1 isk since that would be my target price, to sell that stuff.
But i do take consideration not useing price of someone selling just 10.000 units, since that sell quick anyways, but i tend to look larger sell orders (100.000+).
This little thing tells me after spreadsheeting if ore or refined minerals are better for sell for isk wise.

There's a reason for taking the average of the low sell and the high buy, the result puts you right in the middle of the current buy/sell spread. Remember that what you're doing is estimating, by the time you actually complete whatever trading you're doing the prices will have changed a bit.

I generally use the prices I can get at the intended buy station and sell stations. I can usually buy trit at .10-.15 isk/unit than my nearest hub.

My spreadsheets uses the median buy and sell price of the item (not just minerals) throughout New Eden for a better snapshot. That's all it was intended to be. The user CAN however enter their own price based on local information but it's up to them to do that work.
With coding you could limit the median average to a region or possibly even a constellation (probably), but I don't do code and few people would turn it on in a spreadsheet application anyway.
The prices I see on the spreadsheet after pulling the information and the price I manually enter are sometimes close enough anyway, rarely are they so far out that the information is useless.
You're also right about the number of spreadsheets however without wishing to annoy the people that have done great work (Akita T's is memorable) I have to say that my spreadsheet is the best and most accurate.

Are you surprised by variable buy pricing? Need, or greed drive these players set figures. Believe it or not sell orders are driven by the same indicators, need or greed. If someone needs money fast and they have a load of trit... undercutting the competition buy a large margin will definitely get the attention of buyers and generate cash quickly... all be it at a loss for the sake of time.

I don't go all crazy analyzing this against that across all regions or whatever. If I mine rox, I reprocess and use in building stuff. I use the good salvage stuffs to build basic T1 rigs and resell; stockpile enough of the crap salvage and sell on market. With dropped mission crap I reprocess anything under M3 that doesn't have a good price on market, and sell the good M3 and M4 stuffs. If reprocessing means I lose a few isk that I MIGHT have been able to make 15 jumps away, so be it.

The better question is, what are you planning to do with the mins? If your planning to use sell orders, use the sell order prices, if buy oders, use buy order prices, you're trying to determine if it will be profitable, not how profitabe... correct? --
