I know class = doesn't really work in eve since you can be anything you train for. But in traditional D&D terms what ship type would have a play style like a paladin? :p

Logistics ships probably. Though they can't "Tank" like a paladin could.
There is a ship called a Paladin, you could try that. Or maybe use a RR Battleship.

Amarr ships are the armor tankers.
But carriers in general are the remote reppers.

I'd say whichever ship in EVE is the lamest, since Paladins, Elves, Wizards and all that emo **** are all lame. So the correlation between lame quotients must be maintained.

Well, let's see.
Paladin = heavily-armored knight/priest that uses magic as well as weapons, right?
Well, no magic in EvE, so we can dispense with that part.
Religious - well, Amarr are the religious zealots of Eve, so we're stuck with that as a race.
Heavily-armored - that's just about all of Zmarr's ships save the indys, so we're golden there.
Paladins are melee-only, so you'll need to stick with short-range weaponry - i.e. pulse lasers/autocannons.
As paladins are for the most part single people, you need to stick withthe smaller classes of ship - frigates, interceptors, etc.
SO - to roleplay your "paladin", you'll need to be a Amarr pulse pilot, that flies notyhing bigger than a HAC at most. That should do it.

Its like to ask: Wich D&D class would have a play stile of a mining barge?

I like to play this game because it make my in-game actions and archievments to mean something in-game. |

That would be a Dwarven Peon, which isn't a playable class - too boring.
