I'm a hauler, not a fighter. I'm wondering if anyone can recommend a corporation and division where few (preferably none) of the missions are combat-oriented. I'd like to mission grind without having to train combat, since I still have a good month or so before I'm even done with my industrial skills.

I know what mining missions are, but what are 'trade' missions? Those sound interesting, but what do they involve and what sort of skills are needed?
I have no mining skills, so I'll have to avoid the ones that give mining missions.

Do all courier missions require an industrial type ship or could they be done in a frig? I need to make some fast cash and I may just throw in a movie tonight and do a bunch of courier missions. I don't have industrial ships trained so should I wait until then or would I be capable in my Rifter?

No, there are missions you can complete in a shuttle, as you advance in agents the missions tend to need more cargo space. If you are given Missions to big for your hold, you can pay a friendly hauler, but that would contradict the fast cash scheme then...
So if you start with Level 1 agents a frigate should suffice.
edit: If you fly minmatar use a Probe-Frigate it has 320 m¦ basic cargo capacity plus Skill Bonus:
