Gallente have the biggest industrial (Itty V) a decent sized freighter and a decent size JF
Caldari have a rather terrible Industrial and the biggest freighter/JF

Amarr is probably the best balance in the long run, but Gallente is easily the best up through Industrial V. The Itty V is a fine ship and will serve you well in the long run.

Worthy of note, minmatar blockade runner is the only t2 industrial with 2 highslots. useful if you need a salvager or a probe launcher in addition to your cloak.

All of them are fine for most uses. If you're looking to maximize your cargo hold, stick with Caldari. The massive holds of the Rhea and Charon can really payoff in the long run.
If you're looking for speed and agility, stick with Minmatar. It has the smallest cargohold, but the fastest align time (critical for running gate camps in a transport and useful for saving time with the freighter in hisec). The Nomad (JF) also has the fastest cap recharge time, which is pretty important.
The other two balance the speed and cargo hold and add a little extra shield/armor. They're perfectly fine, but I hate the look of the Obelisk. |

Rated for Cargo Only:
Industrials:
Iteron Mark 5 (Gallente Industrial 5) > Mammoth (Minmatar Industrial 4) > Bestower (Amarr Industrial 1) > Rest
Deep Space Transports:
(A)Impel > (G)Occator > (C)Bustard > (M)Mastodon
Blockade Runners:
(A)Prorator (slightly) > (G)Viator > (C)Crane > (M)Prowler*
Prowler has 2 high slots. So may be better than the best, depending on what you want it for. Again, this is cargo only. Might be a bit different if you were going for agility, but the first two have more low slots. Not sure.
Freighter: (C)Charon > (G)Obelisk > (A)Providence > (M)Fenrir JF's follow the same pattern.
Notice the pattern?
But on average, assuming shield tanking, Caldari > All due to slot layout.
Minmatar usually aligns the fastest and moves the fastest.
Gallente Industrials suck until Industrial 5.
It is worth it for everyone to train Amarr Industrial to 1, you get a 20k m3 bestower with a little over a day of training, including Amarr Frigate 1-3.
So there is no clear cut "best" except in t1 industrials. That would be Amarr due to the m3/sp ratio. If you plan on the long run, Gallente is probably the best. Iteron Mark 5 holds more than all of the Deep Space Transports due to the third rig slot. Gallente has the second largest cargohold for Freighters, JFs, DST and BRs.
Though optimally you will have all of them at 5 and use their ships for their specific niches. That is, Iteron Mk 5 for cheap massive stuff (ore), Charon for massive hauling, Rhea for jumping large quantities, Prowler for secretly probing out stuff, Impel for moving expensive stuff through high sec and Prorator for moving decent quantities through possibly hostile space.

Consider all the ships you can access by training the racial Industrial skill. Prioritize what is most important to you in a ship (what you want to use it for), and pick the racial that is best for you.
For me, I needed to haul huge volumes of ore and ice. Every m3 matters to me. I don't AFK haul much, so speed wasn't a major concern because of warp-to-zero. I don't care about Industrials at all (I have an Orca, and any Deep Space Transport is good enough if I needed one), and I wanted a Blockade Runner for lowsec mission hauling. Result: I trained Caldari for the largest freighter, the Charon (902,750 m3 at level 3), and a Crane (10,124 m3) Blockade Runner. I'm very happy with the choice.
My second choice was Amarr, since the Prorator Blockade Runner is the largest and most versatile, and the Providence is the second fastest (but 2nd smallest) freighter. Was a very tough choice, but the larger freighter was the clincher for me.
