If your bored and thinking you'll probably stop playing..
well, then if your going you may as well do something CRAZY (Like broccoli) something you havnt done before, buy a ton of ships and go harass some massive 0.0 alliance, see how long you can stay alive. You may as well right? Your leaving anyway...
Its better to burn out than fade away.

The real question is "how much time do you have?"
If you have lots of free time which you previously used to play Eve, then you can do something significant like travel, learn a language, volunteer, get training / further education, pick up a new hobby
If you don't have much time, get on the out-of-pod section of the forums and ask for a list of favourite games and ask ppl to give one line on why they like each one. Then do buy and play them (most people's favourites are older games and thus cheap to buy)
Finally, if you want new challenges in-game, then think about what you always wanted to try out of game but never had the balls or money IRL. Start an in-game marketing company for other corps. Or be a film director and make cool eve movies (don't have to be pvp related necessarily). You could be a radio DJ or a journalist or a whole host of other careers that can be catered for in Eve's virtual world/economy

Log for two or three months, indulge in a different hobby, enjoy whatever sport season you happen to be a fan of, etc., etc., etc.
Dominion may or may not be what folks hoped (or feared) it would be, recent Dev Blogs can give you the details on what's what and what's pooched, but EvE will be here when you get back.
Hell, we might even have Station Walking by the time you come back... okay, maybe not.
