Hello,
I can choose between a Dell Studio with an Intel Core i7-720QM and a Dell Studio 17 med Intel« CoreÖ 2 Duo Processor P7450 that is a couple hundred euros cheaper. The only game I play is Eve and besides that I just do routine office stuff/internet surrfing. Is having the expensive processor going to make and noticibale difference? Won't it make the computer het up faster?

pretty please dont buy dell.
Also, eve is not cpu intensive. having a stronger processor would actually keep the heat DOWN, because heat is produced not relative to the max, but relative to the percent used. An older and slower processor running at 100% would probably make more heat than a newer, faster processor (of twice the speed) at 50%.

Get the cheaper core2, Eve is single threaded anyway. Spend the extra money and get a good graphics card. ----

I got a Dell XPS 1530 a couple of years ago. We'd always had pretty good luck with Dell Laptops at work so that's why I got it.
It's run OK since then.
One thing though - it does run hot.
While a the same load on a more powerful CPU may not make as much heat as an older CPU running flat out - newer CPU's run hotter in absolute terms than older CPU's. So it all depends on a combination of what kind of a load you are putting on the CPU and what it's base temperature is to begin with.
An indication of the increasing temperature of more recent CPU's is the advent of CPU fans. At one time - you didn't need a heat sink much less a fan on a cpu. Now ... you'd be very ill advised to run one for any amount of time without one.
Electronics are very susceptible to long term heat damage. They like to be cool - so keep that in mind when you buy a computer. Don't put it under a desk, on the floor where it's fans will clog up with dust and expect it not to die earlier than it might.
For my XPS 1530, I have an external Fan I blow across it to keep it cool. As I use an exteranl KB, Mouse and Monitor the breeze from this fan isn't the problem it might otherwise be.
Another thing you might consider is there is a recommendation I've read to set the EVE Graphics settings for Interval to 1 instead of immediate or default (which may default to immediate) as this is supposed to help the GPU run cooler when running EVE.
There are people who believe that running EVE with Interval Immediate has led to the demise of their graphics cards. With a laptop - this is a lot bigger deal than with a desk top since you can't just run out to Fry's and buy another one.
If you don't have a need for the mobility associated with a Laptop then you may be better off with a desktop machine, with a great big Copper Heat Sink/Fan on the CPU and another on the GPU.
In any case - be aware of your air flow management. Know where the air is coming from and where it's going to. You want cool air going in and hot air going out - and away - so that it is not being sucked back in. Room temperature is important. If the rooms hot - all the air in it is hot - and the computer can't get cool air. Open a window, turn on the A/C ... open a door, turn on some fans. Keep it cool and your system will be done in by becoming out modded rather than failing.

Thanks for the replies! Thank you very much for the advice about heat. The reason I'm getting a laptop instead of a desktop is that we live in a three room condo. :-)
I decided not to go for the Dell, mainly because their expected shipping date for the model I wanted was over 6 weeks from now (maybe because I live in Denmark?). I am instead thinking about the following in the same price range:
MSI Notebook GT628 Intel Core 2 Duo T6600 / 2.2 GHz ( Dual-Core ) 4 GB/ 4 GB (maks.) - DDR3 SDRAM - 1066 MHz 15.4" TFT 1680 x 1050 ( WSXGA+ ) - refleks NVIDIA GeForce GTS 160M Windows 7 Home Premium
Anyone have experience with this?

It will play Eve alright. You may have to turn the settings down though. Is there any option for a 9800M or a 260M? A 280M would blow your mind. Any of these cards will play Eve better than the 160M ----
