Ok, so here's the deal.
I have no idea what to do now. The question I have is really this: What is the endgame in eve? What should I be working towards? I mean, in most MMOs you are trying to run instances, etc. So, what should I be doing now that I have a decent ship, other than grinding out missions or mining for isk?

There is no "end-game" this isn't "most" MMOs
It's a sandbox, end game is whatever you decide endgame is

Sure there is. It is just the EVE is much more metaphorical then most.
In EVE there is no dragon/demon/god or whatever to defeat. There is the Game. The true challenge is in getting to the point where the thought "what the **** have I been doing all this time?!" enters the mind and canceling the account. Then you have defeated the mega-boss of EVE and can declare endgame and victory. At which point the player is obligated to make a forum post announcing to the world this event, and The Distribution Of Stuff begins.
Like most games, the ending is rather disappointing.

Depends on what you wanna do, really.
Best thing: Run missions for money join factional warfare Get cheap pvp ship (tech1 cruisers are the coolest.) Shoot people in face.
Go back to running missions if you run out of money. Go from there. _____________________ Horrors! Demons in the deep! |

You got it all wrong
The endgame is: 1.to find a way to the Jove Regions in the north 2.there you will find the most evil endgame-boss of game history called "Nathan R." Not only will he use dark magic to spawn several Titans out of nowhere he will also link shocking images of himself dancing topless, in local to drive you insane.
But if you are strong enough if you can handle what you will see there you might defeat him, win Eve and see the credits

There is no real end game. It all depends on you. My personal end game was to make enough to play for free (read buying plex/gtc with isk) and still have plenty left over to get blown up. After getting past that point, I decided to make my own SimSpace. Trying to own my own system with towers manufacturing arrays etc. End game involves actually beating the game which is impossible. If it were possible they wouldn't charge you every month. Just do what is fun and you won't need to worry about the end of it.

Best thing about EVE is there is no 'objective' end game, you make your own end game. You aren't limited to killing a boss monster and getting an enchanted sword. It's all subjective - your end game might be to lead a 1000 man alliance, be the richest character in the game, or just max out your mining yield.
A lot of people see 0.0 as the end game, but it really isn't, anyone can experience it.

Here's how to skip through to the endgame:
(1) Get another 5 accounts (2) Get a SHC account (3) Stop logging in (4) Endlessly whine about :EVE: and :CCP: in posts containing no less than 50% memes
Everything between that and where you are now is just level grinding.

In many ways Eve isn't really a game in the sense that there's no victory condition.
In other games, there are goal posts, even if they are moved any time anyone comes close to scoring, so as to keep people entertained.
Whilst in Eve, you really just have the pitch and the ball and you have to use your own jumpers for goal posts. No one tells you whether you're supposed to be playing rugby or football or soccer.
Sometimes people score and win by their own goals and have to work out "what now?"
If that doesn't help, think of Eve as a cycle.
A cycle of violence and isk. Each person attacking or competing with the next to get one up. Kill the ratter in the best ratting system so you can rat in it with no competition and make more isk so you can afford a better ship and stop others doing the same to you...and so on
