Double click to launch the client and log in with your first account (the log in process seems pretty processor intensive so I suggest actually going all the way and selecting the character you want to play. Switch to windowed mode (you might be able to do it without this, but I find it convenient).
Double click to launch eve again and log in as your second account.
Note that the client appears to remember the settings of the last version that's closed. So whoever you log off last from will be the account that it defaults to when you launch eve again.

Note that Trial (even if one is full and the other is trial) accounts do not let you do this, however two full accounts would do fine with the above method. I run both my clients at full screen and alt tab between them personally. ____________________________________________ When going to a party with wine, women, and song. I think you can also select window mode before logging-in my going through the settings button on the login screen.
I also like to turn-on window labeling, so I know at a glance which window is for which character (I have 3 accounts). Makes at-tabbing between windows easier too when using fullscreen, though I find alt-tabbing to be slower than using windows.

You may need to experiment to see what works best for you.
Windows mode takes more system horsepower so if you've got an older system trying to run two copies of the game in windowed mode could be a problem. If you've got a newer system it can do it.
One of my older systems will only reliably run one copy of the game. I can load two but after a while one of them will crash.
I mostly alt-tab between instances of EVE, however, if I have two monitors I'll often put one window in each. You can run with one in full screen and the other in a window but as soon as you click on (I believe) the windowed instance of the game the full screen mode will drop. The other thing about that is that if your system has trouble running in windowed mode - it will effect the full screen instance if you have one in each ... so that hasn't worked on some systems for me.
Getting a better graphics card has made some difference as well as to what I was able to do.
No guarantees though.

I use this method and have had no problems with it, plus settings for the separate characters are saved separately.

I've personally ran nine seperate copies of eve on a single PC (Started to slow it down a bit, but my computer is a beast). As long as you have no trial accounts, and plenty of monitor space, the only limit is your computer's hardware.
Oh, like somebody mentioned, the log-in client is VERY draining. I can run 5-6 clients easily, but running 2 clients and starting up a 3rd will lag my computer until I actually get to the character selection page. Very much a pain.

heh, and make sure to uncheck the "Reboot client on disconnect" box, the client crashing and trying to restart can really kill performance.

I wish you could use a trial accounts with fulls. It would be a good way to see if your computer can handle it before you pay for another account.

You can test that using the test server. You can log using your paid account to both the production and test servers at the same time. This will show you how well your computer can handle running two sessions at a time.
