So far other than a couple people targeting me I have had no issues in highsec with anyone trying to gank my Obelisk, but it did get me thinking. Can it even be done in Empire, and if so how do you protect against it?

Can be done with enough BS AFAIK (what 10 or something?). As for defending against it, I don't think there is much you can do besides WTZ instead of AP - it reduces the risk a little, but does not remove it entirely. (they can still pop you on the other side of the gate).
Someone else might know...

in a .5 or .6 system, it would take 25 bs's with 5k alhpa getting 2 volleys off to gank a freighter. Now the reason people will do this, is because you can buy your bs for lower then insurance fraud price, and after you buy your modules for it, you can even make profit after it blows up, so the only thing you loose is like .15 sec status for ship agression. and the last person takes the 2.15 sec status hit.

25 BS's....ouch. I always WTZ, but the align time on the other side as you know is a crawl at best.
When you pop a freighter how much of the cargo survives? 787k m3 is a lot of cans floating in space.
Seems like the only real 'defense' is to have your corp mate or other account scout ahead.

You can't know exactly how much cargo will survive, and how much will live. However, I believe that each item in your cargohold has a 50% chance to survive. Meaning that if you lost an infinite amount of freighters, roughly half of their combined cargo would survive. But from a single freighter gank, you might get "lucky" or "unlucky". Meaning that it is entirely possible for all of your cargo to be destroyed or all of it to survive (although this is statistically unlikely).
According to rumor, you can exacerbate (that's a funny word!) this effect by putting everything into a container. When cargo is placed inside a container, either the entire container and its contents will survive, or the entire container and its contents will be destroyed. ----------

steps to keep your freighter safe in highsec when carrying expensive loads:
1) never autopilot
2) scout ahead, a fleet of 25+ battleships near a gate is pretty easy to spot (also use your dscanner).
3) have a corpmate (possibly your scout) web the freighter to get it into warp faster.
4) have remote repairs standing by if you see a probable gank, the freighter might last long enough that a sensor boosting RR ship could get enough cycles off to make a difference.

WTZ and friend/alt/corp mate in Huginn with dual webs works great. Also, some skills that may help:
Advanced Spaceship Command V Racial Freighter IV Evasive Maneuvering V Shield Management V Hull Upgrades V Mechanic V

Autopilot in a full freighter is just not smart, highsec or not.
What is #3. How does webbing the freighter get it into warp faster. I didn't realize you could web a freighter to begin with.

When a ship goes into warp 2 conditions must have been met - the ship has to be aligned to the destination and secondly it needs to have 75% of its max speed. only then the warp can be initiated.
Double webbing the ship means that its max speed is significantly reduced and thus warps out faster. The alignment is faster as well.

any webbed ship that isnt scrammed and is already moving in the alignment direction=instawarpy when webbed. kinda fun when someone tries to gank you on a side and ur *slow* freighter instawarps backwards
