Simple enough question, is there any race whose Freighter/JF is better than the others. Is there any differences besides cargo space?

As far as I remember, Caldari have the most space, Minmatar move and align faster, Gallente have the most HP. I think.

Fastest: Minmatar Largest: Caldari Jump Fuel Efficiency: Minmatar
Smallest: Minmatar Slowest: Caldari
I recommend looking at all the other ships made accessible by racial industrial 5 before making a decision. No race is bad; they all have a use. Amarr is well-rounded when considering all the ships, so a good choice if you can't decide.
I have 3 Caldari Charon pilots, and own 2 Charons, 3 Bustards, and 3 Cranes. Freighter m3 and DST EHP/m3 was what decided it for me. You may have different criteria.

Yeah, Minmatar Fenrirs are the fastest. I think it depends on what you want to use it for. If you are going to be hauling your own stuff then you may want to go big but if you want to start a hauling service, you may want speed so you can get more jobs done per hour.

One thing to keep in mind is that unless you always have a full cargo hold every trip, things like align time and jump fuel costs become more important. It is actually rare that I use my entire hold for a customer or myself, your mileage may vary.
Also, with Minmatar you get access to the Prowler which is unique among the BR class in its ability to fit a cloak and a probe launcher. Something that has saved my bacon a few times in wormhole space.

Also consider that if you have a web alt available, align time becomes irrelevant and you might as well go for capacity, i.e. Caldari. --- 34.4:1 mineral compression |

Imho for Freighters cargo space is not an argument anymore, because most of the time you will be limited by the value of ISK instead of m3.

Depends entirely on what you're hauling. If you've ever tried moving several hundred million Tritanium you tend to gain a good respect for the extra capacity the Charon offers.

Gallente Obelisk / Anshar are most popular (certainly not the prettiest). They had the best T1 hauler for mining ops before the Orca and Rorqual showed up. Closely linked to freighters is the Transport ship, where only the Minmatar Prowler (cloaky) has two high slots. At times that would have been useful, but not useful enough to train another Industrial to V.

What freighter you want to fly depends on how your going to use it. If your going to do lots of station hopping, say picking up ranged mineral orders, your going to want a Fenrir. The reason for this is simply because it can get off and going quicker out of stations making your over all pick up time quicker.
If your going to haul lots of expensive goods and want ship hp at its greatest amount, your going to want a Obelisk/Prov.
If your wanting to have the max capacity, and plan to just go from point A to B, then a Charon is a good fit for that since it's speed and agility (should say lack of) will not hinder you as much.
When looking at jump freighters, from what I have heard is one of the very important things is, how fast does the cap recharge at, so you can jump again quickly. I have heard the Nomad is the best at this. So bottom line there is, quicker you get to your destination, less chance at losing your ship and goods.
I do fly all freighters, and used them as well. So these are things I have noticed with my many miles of use.
Another suggestion is, if your going to be using the freighter for a lot of hauling, a good idea is to get the 15% to warp speed bonus implant, and the +5 agility implant to increase your own productivity.
