and are you compelled to be online due to commitments
Im still getting used to the game so i spend most of my time in highsec running missions/mining/probing unless my alliance is being wardeced and then i stop missioning and start fighting. Its a pretty easy life as i can log on when i feel like it and run missions. I occasionally go to lowsec although unless you are going to fight its not worth the bother.
I have heard that in nullsec you have to have a firmer commitment to game play and your time is more organised. I was considering going but of the alliances who have invited us they all say that we need to make a certain amount of kills per month or you will be kicked from the alliance.
So of all the things that you can do in EVE what do you do and is it fulfilling

Sometimes I pour food coloring in the bath tub, soak for about an hour. Then I get out and sit in a basket and pretend I'm an easter egg. Otherwise, I'm most likely ordering food. When the guy comes I usually dress up pretend to be either Italian or Chinese and speak gibberish loudly to them for a while before paying and closing the door. I don't know Italian or Chinese so its more or less just a lot of MAMA MIAS, FAVAMANGOCHI, or CHONG PING TOU SONG MING sounding words.

A few years ago while in NAPsec I would generally rat until a gang formed and then roam empty space looking for hapless idiots to dogpile. On rare occasions I also had the privlidge of sitting at an enemy POS for a few hours making it go away.
These days, roam lowsec with similar intentions (although more often we'll find intelligent opponents), and then run missions on my alt when i'm too broke to fit another ship.

wait wait wait whats going on here! eve has a client lol??! 
but srsly guys i used to do quite a lot of defending against pirates in the solar system of rancer and many defencemobiles were lost 07 
nowadays i am usually in a station in some kind of place called stain (yuck lol) and spend some time speaking with the friendly people with red minuses next to their name in local

Well Eve is a PVP game... Eve primarily advertises itself to include epic fleet battles as a primary component to the game, so it makes sense that PVP is all you'd do, nothing else should be done in Eve.
Also, I heard epic fleet fights were possible 2-3 patches ago, this may possibly not be the case anymore due to the fact that whenever CCP fixes a problem, players feel it is their duty to make a new one by exceeding the acceptable boundary.

I play EVE with EFT and EVEMon while my ship is not spinning on its own in the station.
Sometimes I undock , that's usually when my agent wants me to shoot some criminals.

I know precisely what you are saying.
Yet people are finding themselves docked, spinning ships more and more. Because at the end of the day there are too many people in EvE. In the EvE that had 15K online the chances of you getting 2000 of them in a system at once was 0. In a game of 60K its easy.
Saying it's the players fault for.. playing EvE? Thats not reasonable. |

Its not players faults when previously you could have a 1000 local battle with just moderate lag, then CCP releases 2 expansions and moderate lag occurs at 100 people and servers die at 600.
In this case, CCP were the ones pushing the tech and they broke it.

It appears that you do infact not understand the thing with which it is the the point that I am attempting to convey to you, this may partially be my fault. I did not mean to imply that players are straining the system on purpose, merely that as soon as Eve allows more players in a system that they'll match or even surpass that limit.
It's like having thousands of people spread out across the desert that survive on meagre plant life and then digging a well, naturally people will go there in great numbers.
