Greetings all.
I'm aware that there are many things that will knock you out of cloak (pretty much anything but moving it seems ;p), but is it possible to launch some scanning probes, cloak, and scan while maintaining cloak or are you a sitting duck while you scan?

That's nice, I guess, but a wise man launches probes from a safe spot anyhow. Since probes launch 2002 meters out from your ship (no, seriously, that's the distance) you can just launch them all while sitting still and then hit the cloak button.
Then move them on the map really fast using shift+click and drag and hit scan so that no one can figure out where you are by finding the probes themselves.
And while we're talking about way to be paranoid, never use a path-based safe spot (i.e. warping to a celestial and popping a bookmark halfway through), always take level 1 missions (or higher, i guess) until you get one at least 12 au out perpendicular to the plane of the system's accretion disc (where most of the orbital planes lie). Preferably at least 16au from the nearest celestial, too.

There have plenty of times when I've popped four probes at a stand still and not been able to cloak because one was too close to me. So now I always launch on the run.

2k is the magic number for cloaks. Staying at least 2.5k away makes for a safety buffer. _______________________________

I used to think I had that problem, but remember that even two or 3 minutes after coming out of warp you're often still going .5 m/s or something, which is more than fast enough to screw you up with that 2m difference.
Wait until your speedometer actually hits 0.0 and your probes won't end up in decloak range. I usually don't take the cloak off (I warp into my safe/scanning spot cloaked) until it hits 0.0 anyhow, so it's stopped being a problem.

Well, it's not that bad if it's the first step to a good safe spot, especially in low sec and null null, where you may not have any mission to warp to.
- You warp to a planet, somewhere halfway you make a bm - Warp to another planet not in line with your current bm and where you started first off - Make another bm halfway then warp to your first bm and from there to your second making halfway a new bm which will be your new safe spot, for a while. :3
