The wife and I played for a little while, but I quit because I could never quite understand good ship configs.
I was hoping maybe someone had a guide or something. I really want to give this a good second shot... I basically want to try to understand what makes a good config this time around.

In order to answer that question, we'd all have to know what you are planning to do with these ships. So, generally speaking here is some basic information on ship-fitting:

From there, I recommend using www.eve-search.com and searching on the names of ships you wish to fly. That will give you some idea of players' concepts/opinions about the vessel.
Finally, once you've decided on a purpose and have a hull in mind, get yourself EvE Fitting Tool (EFT)

which will enable you to match your skills with hulll and fit for your purpose. Good luck and fly safe.

Also check out battleclinic.com. They have a ship loadout section for eve online that can provide decent cookie cutter loadouts if you are not sure where to begin.

Battleclinic is famous for terrible, terrible fits. Just putting that out there as a warning.

Check out the scrapheap-challenge forums and the rifter drifter fitting guide (I fail at linkage, google is your friend).
But really, guides will only take you so far. Set up EFT and start fiddling about. Then go shoot stuff and see if it works. Thats the only way to really find out about fitting.

OP,
Download EFT, upload your toons' API info and start fitting ships before you buy the mods. This single piece of advice saved me untold grief and anxiety when I was a newbkin. You can study the fits on Battleclinic and compared them to those on Scrapheap Challenge. There are some really bad fits on both sites in all honesty, but generally speaking the quality on SC is much higher.
Find a quality corp that has the same interests as you and learn from their older pilots. Ninja Extravaganza, Strategies for Ninja Salvagers

I second the advice to avoid battleclinic. Some of the people who post fits there have an active sense of humour.
