I've been playing eve for about 6 months now and have really been enjoying running missions. I have played many other mmo's and have been very active in all of them but so far in eve I have yet to join a player Corp or really talk to anyone. I guess I'm just enjoying being able to log in and do whatever I want without having to worry what everyone else is doing or what they need me to do today. I'm just wondering what if anything I could do (solo for the moment) that would be more challenging and rewarding than lvl 4 missions? Yes I ultimately want to get into pvp but not till I have a nice amount of isk built up since I will be losing ships like mad at first.

I would suggest you try exploration work. Even in hi sec loot can be very nice.

Take it from someone who waited until he had a nice amount of isk built up before he got into pvp...you don't need to wait until you have a nice amount of isk built up before you get into pvp.
Some of the most fun you can have is flying fast cheap ships around and learning a lesson every time you die. A fitted Rifter costs 3-5mil. A single L4 mission can cover three to four of those.
Mission running is a great way to fund a pvp habit, and if you go lose a cheap ship in lowsec for every couple missions you run you'll still be ahead in isk while having loads of fun, and without being bored to tears.

try Faction warfare. You dont need to fly expensive ships. T1 frigs, destroyers and cruisers are very cheap to buy and fit and perform exceedingly well.

Yes but can a 6 month old player solo a L5, and I thought they where all in low sec. Having my BS blown up constantly by pirates would be quite counter productive for me at this point in time :)
