I've been tirelessly working on this, and thanks to the utilization of Carbon within the Eve App now, we can hide the menubar in OSX. Here are the steps:
1. Download and install SIMBL (SIMple Bundle Loader) from http://www.culater.net/software/SIMBL/SIMBL.php
2. Download the SIMBL menubar hider plugin from https://github.com/downloads/Crazor/MenuBarHider/MenuBarHider-bc71ce6.zip
3. Unzip the menubarhider download, and place the MenuBarHider.bundle file into /Library/Application Support/SIMBL/Plugin folder.
4. Start Eve Online, or any other Carbon-based app and your menubar will disappear. Move your mouse to the top of the screen and it reappears. I dual-box, using 2 monitors, both running in forced windowed mode resolutions. DO NOT use the in-game menu for setting windowed mode, or it will not work. I can now see and use the entire panel, the only part now cut off is the 20px at the bottom as you cannot remove the menubar while in windowed mode without editing the .nib files. I've tried to open the Launcher.nib file, but Interface Builder doesn't read it properly, so I'm stuck at that.

Hmm. Not seeing that one myself. Can you confirm with one client it's ok? Also, are you running multiples off of separate installs, or via symlink? The question there is whether it's the same config file, or if there's a difference somewhere that might cause it.

This is not working for me. I use two screens when i put eve on my 2nd screen i still see that stupid menubar. help me plz?

Whut?
1) EvE Online is not based on the Apple Carbon framework. When you see "carbon based" in EvE that refers to an internal CCP software layer that they happen to have called carbon and has absolutely nothing to do with the real Carbon API framework from Apple. The Os X system API used by EvE is Cocoa, not Carbon.
2) Those "plugins" would most probably not work at all with a Carbon based application. They are Cocoa code and based on the fact that all Cocoa applications (most modern applications on a Mac, as Carbon is obsolete and deprecated in favor of Cocoa) are Objective C applications and Objective C is designed to let you inject code into third party applications. So the opposite of what you say is true: the menu bar will be hidden for NON Carbon based applications.
3) You should be aware that, technically, that code violates the EULA as the EULA prohibits injecting code into the client (and for Os X the Cider layer is part of the client). Granted CCP will most probably not actively hunt for this as they concentrate on preventing code injection into the python engine somewhat ignoring code injection into Cider. Code injection on most platforms is frowned upon and actively made harder and is a technique used for operating system viruses and for game bots. On Apple OsX the system does not make it harder, instead it makes it very easy and fights viruses with better design instead.
