Many months ago I searched for a term in Wikipedia and it eventually led me to a list of sci-fi novels (Wikipedia has a tendency to lead you to crazy things). Wikipedia has the entire plots for most novels and this particular one seemed interesting but I unfortunately didn't follow through with it.
Spoiler alert below!!!
In it, it's the future, and a crew of a spaceship is assigned to protect humanity from something. So they enter a spaceship to go do something but it gets stuck in super fast speed. They travel for millions and billions of years (but only a short amount of time for them passes) until humanity eventually becomes extinct and they are all that remain. They eventually settle on a planet in a much changed universe, thus in a way successfully completing their mission by preserving humanity.
Ring any bells?????
By the way, what's the name of that phenomenon where time passes quickly for a space traveler but LOTS of time passes elsewhere in the universe? ____________________

Time passing relatively for people at different relativistic speeds is called 'time dilation'. As for the novel, no bells are ringing, but it sounds interesting, and now I want to have a read of it.

After finding a forum about Novels with Time Dilation I filtered out the stories I already knew and cross referenced the rest with Wikipedia where you said you found it. It is called Tau Zero.

Another book that roughly fits your description, except for the finish (so its not the same book, but its amazing none the less) is Pushing Ice, by Alistair Reynolds.

Vaguely related, but epicly awesome, the Coldfire Trilogy by C. S. Friedman. It's a 'fantasy' story more or less but halfway it becomes apparent they are the descendants of colonists that also spend ages flying around. Gerald Tarrant is one of the more memorable characters ever devised.

Yup, read it. It was great. In fact, I just finished it about a month ago, and it reminded me of the original novel that I'm searching for.
Alastair Reynolds is good, I'm reading The Prefect now. ____________________

+1 to Alastair Reynolds, I'm rereading Revelation Space for the 3rd time at the moment. Pieces of the OPs description reminded me of some of the sub plots in Chasm City but it doesn't match up exactly.
Also, seconding that Forever War is an awesome read. I really like the changes in earth society over time that Haldemen writes of in that book.

Love when he gets back to the all gay society and gets and all gay Platoon(In the book for realz).
Also the Space Battle where they think they have lost the Space Battle and then Bam 3 week Slingshot manoeuvre.
