If I want to maintain range on a target I'm in combat with, do I pulse the MWD while orbiting at XX distance? Or do I manually fly opposite the direction he's in while pulsing the MWD?

if you just want to maintain range set an orbit smaller than what you want and the MWD/AB will cause you to orbit at a larger Diameter. Or if your more pro manually pilot to keep yourself at range.
if you want more help more info is needed. are you tryng to mitigate damage, lower transversal? litterally keep your target at a specified range. ect combinations there of - Nulla Curas |

To kite rats, simply head away from them in any direction once they're blinking red. They'll all follow you. Cause they're dumb as ****, they'll line up in a conga-ball behind you. At this point, their transversal (what makes it hard for large guns to track..) is near enough zero.
Pulse your MWD to keep them at your optimal. Blast 'em to bits. Rejoice.
To kite players .. well there's too many variables to answer.

I'm trying to mitigate damage and being scramed while in PVP mode. I typically fly Minnie ships and engage enemies that I know I can kite while slowly applying DPS at range. I've tried manually piloting but it's very tricky for me as sometimes I get too far out and they're able to turn away and run or some variation thereof.
So I'm wondering if orbiting at a distance and just pulsing the MWD while they try to get in range is an ideal tactic?

Keep at range button?
Though, this can be easily countered by an experienced pilot.
By orbiting you make it harder for them to hit you but also hard for you to hit them.

Depends on many things obviously but lets see...
I'm pretty Ill today and somewhat erm... delirious so this will probably read badly but hopefully it makes some sense
You sound like you already have a good idea of what you need to do in general and I assume you are talking frigates or at least nano cruisers.
Several ships work at different roles better and there is of course close range tackling with a scram and long range with a disruptor.
The automatic controls you have available are: Orbit: computer tries to set an orbit at the range you selected. Depending on your and the opponents speed this could end up being closer or further away than the speed you set. Often it will NOT set a smooth orbit and can be countered by manual flying to send you off into a far more elliptical orbit which can be either escaped, or be used to draw you in closer.
Keep at range: With a web or pure speed at your advantage this can be used to hold a pilot at edge of scram point. Approach is better if you want to get right in someone's face as a close keep at range will end in you bobbing back and forth which is not ideal. For long range tackling you can use this as an emergency OHSHIII button by setting it to something like 50km and using it when your opponent is getting too close, works well combined with manual piloting.
So:
Manual piloting is much more effective ( and much less crippling on the hands) when long range tackling since you have more room to manouver, but also importantly you don't want to be relying on orbits that the computer determines for you since these can be fairly easily counter navigated by a smart pilot.
You mentioned losing point as pilots escape, also they can use your predicted path against you to perform a switchback and get you scrammed and webbed. See this write up for various manual flying techniques. Of course you can do the same, and this is why manual piloting is extremely effective, if not vital.
For close range, and at high speeds, manual piloting can become a bit overwhelming and I mostly use it to get in at the range I want, then rely on either keep at range or orbiting to do what I need... with a little manual adjustment here or there. Again it depends but if you outpace them, particularly if you have an ab, scram and web then keep at range to kite them is pretty much all you need, although if you kite at the edge of point range do pay attention to any attempts they may make to shake you off.
Pulsing the mwd in long range tacklers is often necessary in order to conserve cap. The slicer immediately comes to mind here. Great fun to fly but you definitely want to be careful of your cap. Manual flying in this or similar ships ensures you don't end up orbiting into peoples scram ranges which generally ends in your death ~~~

Am I missing something or it manually piloting the ship one of the most annoying interactions in the game?

Is there a camera setting to make it easier? Or is it just clunky?
