I remember it was possible to make a non-probable T3 cruiser and do missions in that in null-sec, but the recent patch notes said that is no longer possible. So can someone with experience doing mishes in 0.0 suggest some ships that would do a good job of it?

Same as high sec but If you wan't a bit more evasive opportunity try a Gila/Ishtar or some of the other tanky HACs, or stick with T3's. ~~~

You can't make a non-probable T3 any more, but you can make an all-but-non-probable one still.

You have two options now that you can't be unprobeable - fly something that can quickly gtfo out from missions when you see probes on scan, or something that you'd be willing to risk in pvp. Though you can make a nearly unprobeable t3, you've still got that little bit of worry, and you're gimping yourself in terms of completion time.
If you don't feel like running every time you see combat probes, your mission deadspace is the perfect place for nullsec pvp as you have plenty of warning of backup, can see what is coming, and don't have to worry about hotdrops, so fighting mission busters is surprisingly viable.
But if you're planning on fleeing when you see probes, drone boats aren't good imho unless you're rocking sentries, because you've got to wait on the drones to get back. Otherwise, fly what you would in highsec, keep an eye on scan, etc.

Formerly unprobably ships are still quite worth it. Most scanners will lack the implants or skills to pin you down and those that can will take a bit of time doing it, which means plenty of time to react and get safe. My tengu in Curse hasn't been caught since the patch, despite the best efforts of many locals to do so.
