I do lots of courier runs, mostly hi-sec tho :) Since atm Im in my mining/courier runs/missions phase.
I can do up to just under 42k m3 loads, so drop me a line, or better yet a contract

I heartily endorse both branches of the Frog lines. True professionals in their craft.
That said - why is a courier contract with a correct collateral amount put on it not good enough? Why should you have to "trust" them apart from that insurance? In EVE you trust no one!

an important haul is important, wouldnt you rather some pr0s moving it rather than just about anyone that happens to take up the contract.
Sure thats what collateral is for however isk isnt everything in eve, having the right equipment at the right place at the right time can be priceless

You have the right collateral and reward on the contract and you will get the people that you want to handle it. Be cheap on either and feel free to shoot yourself in the foot as well.
Frankly, given the number of freighter bots in operation you shouldn't have any issues. Haven't heard of one of them being setup to break contracts in order to loot cargo. They want to have smooth operations so they don't have to worry about being wardec'd by a hacked off customer.
Isk is everything in EVE. Time is money.

Setup a courier from one station to another to move 500k m3 for about 10k reward and a couple jumps. Someone will eventually complete it. The question is, who are these people? I can pop a belt rat in 0.7 and make 25k, so... ?
