Finally I can log in to post :P
I've been playing for a few days now (tried it about a year ago for a week but it didn't stick) and so far other players have been very helpful answering my questions. Still, I do have some more.
- I've learned that there's a "healer" kind of ship class, some people say it's not used much while others say it's vital. Thing is that I'm not looking for a direct combat role but I do like healers and support so I'm very interested in those ships. I fly Amarr and that racial ship is the Guardian. Some people say it's good, others say they'd rather have a different one.
I'm mostly looking towards PVE (I've heard incursion uses them a lot) and perhaps in the far future PVP. Is the Guardian a good choice for this or should i look at another one? I know it's a long term goal but I'm more than happy to train towards it.
- assuming that it's a good goal to go for, what can I do in the mean time?. Apart from that, are there other ship ships that make use of Amarr cruiser that would benefit me later on or should I look at something else entirely?
On a completely unrelated note; it turns out that the avatar you create looks entirely different in Incarna most of the time to a point where you all of a sudden see glaring issues which didn't show up when creating your character. Given the fact that WYSIWYG doesn't really seem to apply here wouldn't it be logical to have some sort of grace period for a new character when you can go back and to a full character re-customisation? Perhaps a total number of them, or for a few days after creation?

It depends on the situation...
If you're running in a small gang then logis are generally not needed. Guardians are "slow-ish" and have trouble keeping up with a fast group of people. Plus, in a small gang, DPS is generally needed more than "RR" (Remote Repairs). Guardians also have one other limitation... they aren't all that good as a "solo logi" (i.e. you are the only logi in gang/fleet). You CAN fit them to do this, but other logi ships do it SO MUCH better.
To make a Guardian "shine," you need AT LEAST one other person flying a Guardian as well. The big reason for this is that the Guardian is a capacitor hog (largely due to all the modules it specializes in using) and needs energy transfers on it to maintain a healthy power level. A pair of Guardians with energy transfers and remote armor reps between them need a fair bit of ships (and energy neutralizers) to be taken out.

Logis (of all types (except the Onerios)) are ALWAYS welcome in incursion fleets and PVP fleets alike (so long as you have a buddy or two). Generally, the larger the fleet, the more welcomed you are.

Go out and join PVE and PVP fleets with the combat ships you have available. Better yet, join a corp that specializes in either activity. By going out and experiencing combat and remote repairs first-hand you will learn HEAPS more than you could ever learn by running simulations in your head (or on EFT).
And no... even with limited skillpoints you are NEVER "useless." So long as you can use Microwarpdrives, Warp Disruptors, and guns/launchers/drones you can participate in combat (start with small ships running "tackle" and go from there).
I should also point something out...
Logi ships in general are quite skill intensive... requiring good "tanking" skills, capacitor skills, "fitting" skills, etc. etc. They also require a high degree of "player" skill as well as you need "nerves of steel" to keep your cool in frenetic situations (which is something that only "hands-on" experience in combat can remedy). _______________________

Your character's appearance can be re-customised as often as you like, just go up to the mirror in the CQ and click on it.
The only thing you can't change is race and gender.

Thank you all for the answers so far. The two last questions are the ones I'm sorta struggling with although one of them at least can be answered; I've learned about plex (I ask a lot of questions in help channel :P), I've bought and sold one (the other I used to activate the account) so Isk wise I'm set for now. That doesn't mean I plan on doing that forever but it'll at least remove the immediate "pressure" of having to make isk. Also, I've heard that incursions pay well so if I can sit it out till then I should be fine?
On the other one, "what to do in the mean time" I really have no idea, right now I just enjoy being marvelled and annoyed at the same time while slowly getting used to the interface. I've trained Amarr cruiser to lvl 3 and same for the appropriate lasers. No real idea what to go for next and I'm quite happy in my frigate right now. I'm looking for "fun" rather than being wildly profitable (I rarely see in-game cash as a goal in an MMO), any suggestions on this are very much appreciated.
I also set up a blog to keep me busy, it tells the story of my background and tribulations in EVE (shameless self promotion). It's not very good yet but I do hope to improve over time. Otherwise I'm happy to do anything as long as it doesn't involve grind and it preferably involves other players. So again, please; if you have any ideas on that, do post them.

That doesn't seem to be entirely true. I could change the clothing, hairstyle and simple stuff like that but actual body features and dimensions I couldn't. When I went from the character creator to in-game I noticed an "issue" that I hadn't seen at creation, it simply didn't show.
So I petitioned for it and the GM kindly allowed me to fully remodel my character for a last time. I do think that because of in-game looking so vastly different from the character creator they should expect issues like that to happen, account for it by having some sort of failsafe for it in the form of every new character having a few extra remakes, temporarily available. Perhaps I'm seeing this the wrong (newbie) way though.

Logi are great.
That said this is NOT another mmo. you can do what ever you like depending on what ship your in. Simply because you fly logi does not mean you can't also fly a battle ship or battle cruiser. Swapping between the 2 jobs is as easy as swapping ships. Your not priest or a warrior..you are what ever your ship is.

So logi is a great goal to have as it is great for incursions and pvp. It is of limited use to smaller gangs in pve so should not be your only ship.
When skilling up you will pass through a lot of neat ships and many skills transfer over to the guardian. So if I was youà.
Join a corp! they offer advice and assistance and really make the game fun. Finding the right corp though is hardà
That done do what the corp does..
In addition missions are a good source of learning and isk. Join in with corp mates when possible or solo mission
Skill wise I would aim for the battle cruiser. This uses the cruiser skill you need for a guardian. Additional training for battlecruiser to 3-4 and your gunnery skills to 4 may take 2 weeks so it will slow your progress to the guardian but in return you get a lot more flexibility and can fly some great ships.
Once you can fly the battle cruiser focus on improving your tank(mechanic skills) and your support skills (engineering and electronics) as the guardian needs both. It needs a good tank and good fitting and capacitor skills.
Once these are to a decent level train cruisers 5 and then you can logi.
By the end you will have good skills and a lot of ships good in a lot of different roles. DonÆt pigen hole yourself.

On the whole ships thing; I think I have more questions about what to do rather than what to fly, instead of rushing forward into bigger ships without aim or control it seems much better to think of stuff to do (or aim to do) and then start cherry picking ships for it? From chatting with people in-game incursions seems to be a great goal to go for as it's about teamwork while making use of the role I enjoy doing. Right now I'm doing the Epic Arc and while the fighting is interesting I cannot help but notice that I am just chaining and grinding NPCs, I ofcourse realise that Incursions is going to be the same in that regard but at least it involves other players. I left WOW because of the mindless grind and I'll be damned if I get fooled into that again :)
So I'm trying to find non-grind stuff to do (that if at all possible also pays some isk but this is not a requirement, I'd rather have "fun") while staying as much focussed on the Guardian as is possible. One earlier comment was about PVP, I'm far from ready (or willing) to do PVP :P
On corporations; I've heard tales of horror from the rookie channel about joining a corporation, people have told me about the EVE University (joined their channel) which seems to be good but I'd rather be in a smaller group than be with a whole lot of unknowns. Also, as I don't really have anything to offer nor do I have any knowledge or experience on making an informed decision on which corp to join it all seems very much like a jump into the abyss.
In short I'm still trying to find fun stuff to do that's on my path towards a Guardian and I'm very unsure about joining s group of unknowns based on no knowledge whatsoever. Feel free to disagree and explain to me why I'm wrong on this though, or where I should be looking.

You will have to become a thief then. Any other profession will make you click the same buttons over and over again. But then, as a successful thief you have to appear to be just another player, what requires you to grind. You are ready for PvP when you are able to undock. The willing part leaves the question why you want to run incursions. There is no reason to wade in ISK if you have nothing to spend that ISK on. EVE is a PvP game. There are plenty of players that run incursions to buy a nice PvP char or to get the funds for a super capital. Incursions in itself have no meaning. They just keep spawning, no matter if you fight them or not.
Technically you can play EVE in diablo mode, but you better stay solo then. Shinies will spawn PvPers.

Eve University is an option, as are corporations that accept new players. With patience, you should be able to make contact with corps that accept new players. With patience, those corps can be found in the corporate recruitment forum - just scroll down a bit further on the page that brings you to this forum.
I suggest taking your time reading the many, many postings. Become accustomed to the language and tone of the posts - that will tell you a great deal about the corp's "style" right from the start.
You have many options for a career track.... if you're unsure what career/activities you want to spend a majority of your time doing, you can't go wrong training skills in Electronics, Engineering, Navigation & Mechanics. Those skills make your ships more efficient, better able to fit high-function modules. It isn't "sexy" but does give a long-term advantage.

I do run in armor PVP fleets in Factional Warfare (been running in them all week). The Oneiros is generally laughed at because it can barely fit an armor tank that can't be alpha'ed by a large group and it can't use energy transfers the same way the Guardian can (no infinite cap = limited endurance = no staying power). You CAN fit an Oneiros with a shield tank which gives it a fair bit of buffer to absorb damage... but then it would be out of place in an armor fleet entirely as nothing would be able to rep him/her. _______________________

Obligatory link to What To Do In EVE Online chart!
My recommendation for the short term is: learn to do exploration, trade and covert ops. The skills don't all contribute towards flying a logistics ship, but they do contribute to having fun through diverse activities.
