Is it just a matter of trust where one party agrees to the transfer, the other party sends the isk and trusts the first party to make the transfer or is there a binding deal? What I would like to avoid is not getting the ISK I ask for and Im sure the buyer would not want to risk his ISK for nothing?
Is there any method to redress the issue if one party doesnt pay up? --------- The words "Exciting" and "Safe" are mutually exclusive; pick one.

Initially its a matter of trust, but as there's a RL monatary gain invovled in it for CCP (i.e. the ú15 transfer fee they receive) CCP will ban anyone who tries to rip someone else off.
So basically, yes you can get scammed but within a day or two after submitting a petition the GM's will be on the case and return your money or isk and ban the scammer.
The vast majority of transfers these days go through with no problems. Just make sure both parties evemail each other their intentions to pay/transfer so you have a record of what you're doing.

Hrm......
(IIRC, CCP has an anti-fraud policy for any sale/action done on the forums, so if you get defrauded the other player could get banned, fined, hunted down by Eris's pink moster, etc.)
