Is there a way to scan only the asteroid I select?

Not that I know of. You can cut the area of effect that get scanned by using the scanner setting, but I am not sure this affects the survey scanner in the game?
I normally just pull up, hit the survey scanner, sort on name/type and target what I was looking for.

The survey scanner scans all asteroids in a radius. HOWEVER, if you sort the asteroids by name, just right-click on them until one has the "Unlock target" option. Obvious, that's an asteroid you're locked onto.
Crappy workaround, I know. Still, it's the only way I've found to tell which roid is yours.

actually if you left click to select the asteroid while the scanner pop up is up it jumps to it in the list when it focuses on the roid. :P

Be aware of false entries in the scanner results. Sometimes it will show old values for the roids or multiple entries for the same roid at different values. --

To avoid those false entries, you have to "clean" the scanner before closing it or running another scan (there's a button for that at the bottom of the scan results).

Wish they would release a scanner with better facilities... eg, scan for just one ore type & show with ranges, etc. Im amazed they haven't done this already.

I've found that if you pull in your point of view to very close to your ship, then as you hover your mouse over the 10 entries of the roid type you are interested in, your point of view will rotate to point to that roid one at a time as you mouse down the list.
The following is probably more useful the slower you mine:
You scan and sort for the roid type you are looking for. You pick the one with the most units listed and target it. Grab a calculator, if you know the rate you mine at in m3/sec.
Units x ore size/mining rate = how many minutes until the roid will pop.

Indeed
Mining Mode: self clearing, adjustable area of effect, able to filter ores based on overview settings
Scouting Mode: non-self clearing, non-adjustable area of effect.
With the limited area of scan the non-clearing nature of the scanner means you can fly through and entire field and build a complete picture of what exaclty the yield of the entire field is.
