I am hunting Guristas using Bloodclaw light missiles. Their basic range is 18.750 km (3,750 m/s times 5 sec flight time) and their basic damage is 75 kinetic.
Now, I have some skills that adjust these numbers. I'm flying a Kestrel which gives bonuses to kinetic damage, I have a couple of points in the Missile Bombardment skill which ups the missile flight time, etc. How can I see the skill-adjusted stats for my Bloodclaws? Right-click -> Show Info just shows their basic data...

I think when it is installed on your ship, you will see the difference in the "right-click" info.

WHEN IN SPACE: Show Info your ship, and go to the Modules tab. At the bottom should be the ammo you have fitted. Hit the Info button to the right there.
WHEN DOCKED: Go to the Fittings screen, and then right-click the charge (in your gun on the Fitting screen), and Show Info it.

Aha, thanks. And I take it the decimal part of the flight time gets dropped from display...

Hmm...
OK, in these info screens I see the skill-adjusted damage number (my Bloodclaws hit for a bit over 110 hp each). However I have trained the Missile Bombardment skill to two points. That should give me 20% bonus to flight time. Standard flight time for a Bloodclaw is 5 seconds -- I should have now 6 seconds flight time. Yet all these info screens still show 5 seconds flight time.
What I am missing?

Weird. I have Missile Bombardment at level two as well, but it shows the correct time on both of those screens, as well as the correct speed and damage.

The info shown isn't always accurate and often rounded of to some bad number (like flight time on rockets will show 2 sec until you get level 5). And damage on the missiles do not include any ballistic control you have fitted.
Best thing to do is just do the math yourself. Range are flight time * speed * (1+(0.1*missile bombardment)) * (1+(0.1*missile projection)) * ship bonus.
For example light missiles on a crow. Missile Bombardment level 5, projection level 4 and Interceptor skill level 3.
3.75 km/s * 5 sec * 1.5 * 1.4 * 1.3 = 51.18 km. --------------------------------------------------------------------------------
