LONG TERM PLANS ARE FOR SISSIES.
Well, to an extent. I mean, planning out your skilltree for the next 6 months, and sticking exactly to it is stupid. Your surroundings evolve, new things are introduced, what you want from the game can change. Life depends on your ability to adapt to changing environments, and blanking out your environment will ultimately lead to bad choices.
Personally, I have a vague skill plan which I've kept roughly to for my time in Eve. That is Gallente frigates and cruisers. This is simply because those are the ships that interest me, not because a year ago I sat down and said "right, I want to be teh pwnzor Taranis pilot and I'm going to shut my eyes and ignore the rest of the world until I am". I'd look at what skills I still thought I needed, and train them depending on which seemed useful at the time. Right now, I'm getting near the end of the skills to train in this field. All I really have left to train are specialisations to lvl 5, and those are dull. Really dull.
So I'm left with a lot of choices. For instance, Interdictors. Those are awesome ships, which are honestly having a real effect on the way our Stain campaign is being fought. Also, it wouldn't take too long. Or, Command Ships. Or I could finally pilot a Battleship. Or I could train Recon Ships even though the Gallente ones look useless to me. Or I could train another race (probably Amarr). Or I could start paying more attention to the industrial side of the game (something which has started to interest me more and more recently, after 18 months of entirely ignoring it). Since I started playing Eve, I've been constantly looking at my skill plan and changing it to what I feel is best for me.
So, I suppose what I'm saying is, keep your long term goals in sight. But don't get too locked into one path. Three months ago I would never have anticipated that the economic and industrial aspects of this game would interest me so much now. I've changed, the game's changed, the people I play with have changed.
And at the end of the day, it's a game. If you desperately want to fly a Pilgrim, go for it man. Maybe you'll get more enjoyment from training Amarr Cruiser 5 now than Heavy Assault Ships 5 in 9 months. And it's not like you can't just move Heavy Assault Ships 5 back a few months, especially since it's a marginal benefit over lvl 4. I trained Interceptors 5, Assault Ships 5 and Heavy Assault Ships 5 and to this day I'm never really sure whether that was a good thing or not. Personally, I don't find the other race ships all that tempting, so I think I'm quite happy with being good with Gallente ships, but if you find both races nice, I think I'd suggest going dual race.
I guess it comes down to what you value more. Perfection, or versatility. Three months ago, I'd have said perfection. Now, I'm not so sure. I don't think I regret any of the choices I made. I hope you don't regret yours either.
And if you honestly can't make the decision, you can always just open a power of two account. Whammo, problem solved.
