Is there like a good PvP dog fights where your manual piloting abilities and reaction speed wins the fight?
or is all point and click and stats win the match?
I havent gotten a chance to play this game more, but I was wondering if the smaller fighter ships have like more sci-fi ( Babylon 5, Battlestar Galactica..ect) style combat. It be cool if you could , have a pretty intense dog fight in a astroriod field while avoiding running into something and trying to frag your opponent.

Yes there are good dogfights, rarely does manual dexterity win the day although I've heard of pilots manually dodging missiles.

Not even close to dogfighting combat. All fights are between capital ships. There are fighters and drones, but you don't pilot them.
The most manual piloting you need to do is attempt to get the right transversal velocity so you can hit people or they can't hit you. Combat in Eve revolves more around your ship setup, your friends, and your character's skills.

Oh ok then, I thought it would of been cool if it was like Capital ships fight each other while the smaller fighter ships are fighting in like big ass choatic battles.
Kinda like the opening battle in Revenge of the Sith.

Definately not turn based. Weapons have an ROF value that determines when they fire, it isn't determined by some sort of initiative system. It can look turn based as generally you wont be hitting your enemy when he hits you unless you started firing at the same time, so I can see how it looks like it alternates.

Naw, it's real time. While it has the aspect of turn-based where you can do as much stuff as you want without being restricted to one action at a time, the variable timers on everything keeps it from being turn-based. The closest you could get would be tick-based, but that still doesn't account for the fact that I can be doing any number of actions at once, rather than just one at a time in a true tick-based system.

That's pretty much what happens, although I'm not sure how many dread v dread engagements there has been.
Check the video forum out http://oldforums.eveonline.com/?a=channel&channelID=29045 for an idea of large scale battles.

Well, I'm actually an unarmed martial artist Caldari monk, so I get 5/2 attacks/round. Which would make it
I shoot - I shoot you shoot I shoot - I shoot - I shoot you shoot
But then again, when in trouble, just summon a Behemoth

Inty vs Inty fights are basically dogfights.

pretty much yes. Cruiser fights can also be like this, i suggest you try out combat in a fridate against another first. Speed, for smaller ships, is the main defence, so there is quite a likeness to "dog fighting"
Your refexes (and connection) need to be pretty good to be successful as a frigate pilot.
