How many skillpoints do you have? If you are skilled enough to fit your dessy with T2 guns, the upgrade to a talos is not required. Your destroyer should be more than enough, especially if they are fit for damage and sebo.
The cynabal isnt very tanky, it excels at speed and keeping range.
The gila can be quite tanky, comparable to battleship EHP if fit correctly, but as you stated, thats not likely for what they are doing.
My advice would be either a blaster fit caty, a rail fit thorax, or a vexxor. All are cheap and will EASILY outweigh the loss of those faction cruisers youll be blapping.

800 DPS is definitely enough to bring them down fast. If you get a good warp in, web them down, and track well, you wont have any problems with either of them, depending on the security rating of the system of course.
Edit: You call yourself a carebear, but you have just demonstrated the only real difference between a carebear and not-a-bear. You are willing to take risks and blow up spaceships to further your goals. I wish you luck with your task.
