Bubble up before the chance to warp and then drop a second bubble partly overlapping the first.
Then with both ships burning around, hope to get within 2000m and decloak them.
With something carrying drones, or something really quick it's quite easy to decloak.
Just need to be able to drop more bubbles if the ECM Burst breaks lock, which it often does.
The Viator takes a while to burn through shields but then it drops quickly.

If you don't see which way then you guess shortest route out of the bubble and back to gate and then burn loosely along that sort of path.
As long as you can catch them in that first bubble, the ability to decloak is surprisingly good. Not always, but about 6 times out of 10.
The more difficult ones to catch are the pilots that burn in an unexpected direction, back through the bubble at an angle to where the Sabre was when it dropped it. Then the advantage you have is that they will be in the bubble longer and once that MWD cycle ends they are moving fairly slowly. I wouldn't call it a mistake not to do that. It's a good pilot that does and it improves the chance of escape.

It's nullsec. Kill all the things first and ask questions later.
From the other perspective though, if you're going to lose one, carrying cargo seems to have no affect on the extent of the resulting whine.
