Inexperienced player here, was running some anomalies today however I ran into some trouble in a Gurista Rally Point during the last wave dealing with the enemy battleships. I was flying a blaster fit Moa and found that I lacked significant DPS to break the rat's tanks at a decent speed thus my run time became rather slow and frustrating. It is worth noting that I am very new to running combat sites and didn't want to risk an expensive fit out in lowsec, as such I was using T1 guns. My gunnery skills are almost maxed so I'm not concerned about skill deficiencies affecting my DPS.
Anyway, should I be running a site of this difficulty in a larger ship? As I said I've got very little experience to draw upon, the largest site aside from this that I've run being a Guristas refuge which was easily within the capabilities of my cheaply fit Kestrel.
Put briefly, what size rat spawns warrant what sized ship/ amount of DPS?

With larger sites you're (theoretically) looking at more isk from bounties/commander spawns and potentially escalations that drop better loot. To balance this out they are placed in Lowsec (Risk) and you need better and more expensive ships and gear to complete them quickly and safely (more risk)
Now weather or not this is well balanced is of some debate as the risk of lowsec, or even null, can be heavily tempered by owning a system or a constellation in the case of null. There are also a lot of things you can do to temper the risk of what ship and equipment you use to run said site. One way is, as you've correctly identified, to run T1 ships and equipment. Another is to run it in a much more expensive hull that has special properties or abilities to help it run the sites safely. Things like certain hulls ability to not show up on D-Scan, ships that are interdiction fit or ships that have cloaking ability. Some ships you can just make really tanky or you are able to run PvE sites in PvP fits. You can reduce the risk via being vigilant on who enters the system by keeping an eye on local and keeping d-scan open to check for combat probes.
This is all a very long way of saying you need to use better ships and gear, find a corp that owns the space you're interested and join them or find an activity that has the correct amount of risk vs reward that is good for you.
As to the exact ship, maybe look into some of the T2 or even T3 hulls. BCs and BS might be a bit slow if you're running around lowsec. I know something like a HAM fitted Tengu can get BS levels of dps (800+) and some of the T2 cruiser hulls have things like D-Scan invisibility or can cloak (or both) but might be lacking a little in dps while other T2 hulls will have plenty of DPS and speed and just require you to be vigilant.

- Tengu - great tool of rats destruction! It can push over 1000 DPS if pimped out. Unfortunately in covert-ops configuration it losses much of its DPS due to need of Accelerated Ejection Bay subsystem removal. Also losing Tengu hurts your wallet badly because it's a billion ISK worth ship.
- T2 combat recon cruisers are invisible to D-Scan. Great example of this class is a Rook. It can push nearly 600 DPS with HAMs and drones but Rook cannot fit cov-ops cloak so you must rely on MWD+cloak trick and mobile depot for refitting during traveling through low and null-sec. |

I find the Curse is one of the best low cost site runners for hisec and lowsec.

Either bring a scanning alt along, or a mobile depot to refit cloak for probe launcher.
Alternatively, you can refit the MWD for a 500M AB. |
