A few of my friends have gotten into mining after I showed them how profitable it is, so we got togeather, one having an industrial hauler and began to mine. We soon realized that unless the hauler was actually flying to and from the station delievering the goods, it was other wise just sitting there so I thought of this idea:
Person with the hauler comes to the belt we are mining, gets out into his pod and heads back to get his miner, basicly leaving his ship for us to guard with our drones. When we fill the containers to cap he gets out of his miner and back into his industrial hauler, pulled all the ore into his hold, delievers and the cycle begins again.
Is this a good idea or is there any problems im just not seeing?

No offense, but if you aren't mining enough to keep a hauler busy, you will have more problems than what your hauler is doing.
I wouldn't recommend ejecting from a ship anywhere besides a safespot. Most people wouldn't bother to steal a hauler but a poor newb or someone who just wanted to make everyone's lives hard would take it without thinking twice. You could try sticking a mining laser or something like that on the hauler.

I agree with this. Just slap a mining laser on. It won't mine much of course but no reason not to and every little bit helps.
If eh ejects from the ship as mentioned just a matter of time till someone tries to take it. Not only that I do not think someone jumping into that ship will get flagged to you so they can drive away in peace. Best not to go there.
Best option is to get a few more miners going. Your profits are maximized with the fewest miners you can managing to keep one hauler completely busy. The bigger the hauler the better. 3 Hulks can keep a 30k hauler quite busy.

What I usually do when I'm hauling is slap a tractor beam and a salvager in the high slots, then loot and salvage the rats once the miners' drones finish with them. It's not much, but it passes the time =) Of course, this works better in lower security systems where you see more rats. Obviously don't go into low sec unless you also have a couple friends flying armed guard for you as well.

On the occasion where our ops don't keep the hauler busy, the hauler docks at the station and brings out his/her mining ship. Mines along with the rest of us for a bit until we have a couple of full jetcans, then goes back to hauling until they're all mostly empty again. Rinse and repeat.
Same net effect as your suggestion, but without the risk of ship theft.

Leaving a ship in space is never a good idea......unless you want someone to take it.

Is it possible to take an unpoded ship that way when the ship is equiped with riggs or modules wich the new "owner" cant use cause of needed skills?

Nope,
If a person does not have the skills to use your ship they can't board. Not sure about modules however. Those that the pilot doesn't have skill for (eg tech II) might just offline. I am not sure about that one.

Dunno about the modules...I expect they would just offline themselves but not sure if the pilot has no skill for them. Likewise if the new pilot can't adjust the ship's fitting reqs sufficiently for the build. I assume once docked he would not be able to undock till the problem was sorted out.
You would of course need the skill to actually fly that ship before being allowed to board it.
As for rigs I have heard you do not actually need the skill to use a ship with a given rig...just to install it. If you have no skill then it is L0 and you get full drawbacks on that rig although I think the rig still provides its benefit.
Just what I heard though.

you can't board a ship you fon't know how to pilot, but you can board a ship with modules you don't know how to use and even with rig you haven't the skills for.
The modules go off line. The rig instead (at least before revelation 1.4 and there was nothing onn the patch notes) will happily work even if you totally lack the relevant skills. The drawback are at the max level but for some rig that is a secondary matter.
