What do you want to change it to?
you don't just mean the shortcut in windows do you? Changing this wouldn't be against any EULA, it's your pc, do what you want to it.

IANAWP (I Am Not A Windows Programmer), but I'd have thought that the task name of a program is encoded in the executable. So you'd need to disassemble and recompile for the change to take, after which you'd be running with a modified, non-stock exe (almost certainly against the EULA). I'm not sure exactly what checks occur before you connect to a server, but I do know that it checks your version is the same as the server's. If it does this by some kind of checksum on the exe, you wouldn't even be able to connect.
Short answer is that it's probably not possible. Is it that important, anyway? Trying to get away with Alt-Tabbing at work when the boss comes round?

Sounds like he wants to play it at work/school and he needs the window to not look like a game :)
There are programs out there that will do exactly what you want. TweakWindow is one of them (not free tho). I haven't used any of these myself, so your mileage may vary.
None of what it does is probably EULA breaking, but that doesn't mean it won't interfere with the game working properly though. |

Work gives me time to read the forums. Otherwise I'd be too busy playing the game to get useful info over here.

If you have many programs open, the boxes in the tasbar become too short to be able to tell what program it is.
Also, first open a few programs to the point where the next program would go in a second line in the taskbar, then go back to the first line. Your eve "box" will not be visible

Or, better yet, get your boss hooked on the game (>.<) "Nothing except a battle lost can be half so melancholy as a battle won." |

Is your boss fooled by the icon that says "EVE"?

I recommend NirCmd for this little task: http://nirsoft.net/utils/nircmd.html. It's a command line tool, but you could easily set up a shortcut to it to save typing every time you launch Eve.
You may need to read the help, but NirCmd can easily change window titles. From memory, something like:
nircmd win settext title "EVE" "Calculator"
Apologies if I'm not spot on, but something like this will find a window called "EVE" and change its title to "Calculator".
You can also mess with window styles, to eg. remove the icon. This involves messing with the style changing commands; sadly I forget the magic number for "no control box" which hides the icon.
Hope this helps. Of course I'm not advocating playing games at work.

Check your local unemployment laws while you're at it.
Since your boss is "too smart for that" on your previous attempt you've been caught playing at work once already, and you plan to continue?
If they catch you a second time, you've then shown your employer that the company's rules are only an obstacle meant for you to find a way around. But I'm sure being able to play at work is more important than having a roof over your head. @@

I use a program from http://www.eusing.com/ called taskbar hide. It lets you change the name and also lets you set a key that will then remove the selected programs from the taskbar and hide the windows. Very handy. |
