I know that the security of a system effects what type of roids you find there, but does it effect the quality of the roids too? Given that Scordite is so profitable and appears in high sec systems, is there any reason to risk mining in lower sec other than for kicks?

Generally speaking, you can only find the rarer types by going to lower security.
Unfortunately, I've heard mineral prices right now are really whacked out, so what used to be rare isn't so much anymore.
If you're strictly mining for money, check all the mineral prices in the area you want to mine in, and figure out what's best.
Note that if you're in a busy region with a high mineral price for something, chances are most of the systems will be fairly well mined out already, and the asteroids will not have regrown to full size.
Last note, increasing your mining yeild itself may make up for lower mineral prices, easily. You can do that with skills, drones, tech II modules, gang bonuses, better mining ships, etc..

In my travels I've found that the quantity (number of 'roids and average amount of ore in each 'roid) and quality (percentage of 5% or 10% bonus 'roids, like golden omber over regular omber) increases the lower the security system. In some .4 systems I've found scordite with over 50k in a single roid, while I rarely find more than 7.5k or so in a .8 system.
Disclaimer: This is only based on my very limited anecdotal evidence. It's quite possible I have too small of a sample size.

Some of this would be due to the fact that the people in the lower sec system are spending time mining the higher end ores that are present there. But yes, in general, the lower the sec rating, the more units of ore per 'roid. -=^=-

However, Scordite is Scordite. It doesn't matter where you find it, it still refines to the same amount of minerals. If you can find it in high-sec, then there's no need to risk low-sec to get it.
