So I have my new Uber PC, I have just set up my monster 30" HP monitor.
Eve offers 2048 x 1536 as max resolution.
I edited Prefs.ini from 1600x1200 to 2560x1600. No change, and the mouse continues to be offset when clicking from when the buttons are. That is to say, 1.5 higher and 4 cm to the left when clicking a button, assuming you want the button to do something.

2560x1600 appears in the drop down res picker on eve for me.
Check your graphics card and make sure you have latest drivers for your card and your monitor.

Check your Graphics card ffor it's optumal resolution, then check your monitor for it's optimal resolution, set both to the same thing and try again. Even though your Monitor may support the higher resolution, your video card may not be attuned to such a high setting and thus you won't actually be able to make use of those settings. Even if your card can support them mind you.
BTW most of the time, settings greater than 1600x1200 are designed for people running dual monitors or more in a presentation type setting. the higher end resolutions are just not designed at this stage for single monitor gaming.

I will check the monitor drivers. One other thought is that I use Eve-Mon & windowed mode. Might be connected to that; I sill set it to fullscreen. Clearly today is not a good time to experiment.

I don't think it's a matter of your card(s) horsepower, more rather, I think it's a matter of card to monitor compatibility. Alot of cards today are very capable of hitting those resolutions, even my piddly ATI x1300 series can do the high end res stuff, but due to the fact that my monitor can't handle that res I am not able to use it in such a way. Now giving the fact you say you have a 30" monitor, is it a DLP or LCD screen, are you utilizing the DVI functionality ports, and does your monitor support that level of resolution are the 3 biggest questions that come to my mind. If yes to all, then as you said, checking for an updated Monitor driver is probably the best thing you can do. If you have to say no to any of those questions, you most likely won't be able to fully utilize your vid cards abilities until you get a monitor capable of handling the same levels of resolution as the card(s)

It's a HP LP3065, def res 2560 x 1600.
It runs using dual DVI from the primary GForce 8800 Ultra (2 x in SLI).
Half-Life 2 and Live for Speed already happily run at 2560 x 1600 super smooth.
I updated the monitor driver from HP, so all I need now is Revalations 2 to roll out to see if that was the issue.
Other than that, it's Vista 32 ultimate witk all patches and current versions of drivers.
So fingers crossed for tomorrow morning...;}

I have this same problem.
1680x1050 though. My max is 1360x768 which is terrible.
22" widescreen with an 8800GTS 640MB on Win Vista.

maybe its an nvidia driver issue i have a dell 3007wfp-hc and a radeon x1900xt and have no problem picking 2560x1600 from drop down box in eve.
In fact eve lists all resolutions that my card is capable of in the dropdown box.

Mine only lists a few resolutions.
This morning I set the PC off downloading the full install.

I have seen something similar to this happen in other programs. In those cases, the issue was usually that the display wasn't set to the Primary monitor. Most modern cards will support multiple displays, even when running SLI, so there's a secondary (and possibly more) display option that doesn't usually get the full horsepower that the primary does.
The key is to make sure you've only got your primary monitor selected in your display properties, and if it's an option in Eve's config (I don't remember if it is or not) to make sure it's set to your primary as well.
Also, make sure that if you're running EvE windowed that it doesn't overlap off the edge of the monitor, even by 1 pixel. That forces the rendering engine to fork off to both display drivers, instead of letting the hardware focus on the one display. With an SLI setup you might not think that's a big deal but DX has never worked well in windowed and spanned environment. Your best bet is to have the rendering target (the display window) on one display, or full-screen across them all (which just uses the extra display framebuffer)

Not to knock Vista users, only to knock Vista itself. (heheh)I think alot of the issues with compatibility with Vista stem from the fact that even though periferal manufacturers had advanced notice, they did basically nothing to prepare for the vista roll out. Thus ensuring a large gap in compatability of hardware that's out today.
Beginning of the year, I purchaced a brand spanking new system complete with 64bit MB CPU , added a nice shiny new X1300 ATI Vid card, plugged in a hot and heavy SB XF-I soundcard, boosted with 2 gigs of ram, 120gig HDD, and guess what? Vista wouldn't recognize the abilities of the Vid card, Catalyist CC wouldn't even load on the system, the SB card was not compatable or so Vista said, and that after I loaded and installed the Vista compatability drivers from the manufacturer's websites. Slowest load times and start up in the history of computing, I think that old room sized machine they call the first computer in history started up faster than Vista does. Now my point being as I digressed rediculously off track there, it's possible that Vista is having an issue pushing the abilities of the Monitor and Vid card through the same info threading so it may not be actually seeing that "hey, I'm completely capable of doing this, even though my pathing and programming says otherwise." Thus the reason I formatted my HDD, and mapped it with WinXP. All my stuff works great now, and I don't have to go fix dinner, wash my car, rub the significant other's feet(which always leads to you know what), then watch a movie, catch the late show with Conan O'brian, then come back to wait 5 more minutes for my computer to load up under Vista.
Hope you find a work around though.

Why can CCP not just make it so the game actually reads the prefs.ini file and runs the window at the resolution you set in it ?
I run 2 clients in windowed mode on a dual 1280x1024 res screens, both clients at 1280x960 before rev2. Now I can no longer do this due to the lack of display resolutions in the dropdown.

Just because you got a 30" monitor doesn't mean it supports 2560x1600. Hell, my new 24" had to be a 1080i/p HD BlueRay compatible monitor just to get 1900x1600. Most 22" and less are max 1600x<whatever>
Just because your graphic card can go higher doesn't mean your monitor can. :P
Also, game looks better in windowed mode.

Okay, I think I figured this out!
Osric, you running Vista? I'm assuming so. Under the NVidia control panel, go to "Change Flat Panel Scaling" and select "Use NVidia Scaling..." and apply.
Upon greetings with the login screen, my native resolution was sitting at the TOP of the list.
Try other options there (of the four or so) and see what works, it HAS to be something relating to this.

Delete users/App.../CCP folder
Edit prefs.ini
The 2056 x 1600 was at the TOP of the resolution list not at the bottom.
Argh.
