I'm on my 2nd trial (now that I might be able to afford playing for a bit), and I've seen a lot of talk of L2 or L3 missions. I've run missions from the tutorial agents and then found my own. I just did some missions in 0.5 space last night and made decent coin from them.
But I have no idea what level they were. What is the "level" business? Is it something on the mission description in the journal?

The level of the mission is equivalent to the level of the agent.

So, when someone speaks of a Level 3 mission, that mission came from an agent with a 3 rating?
Does this mean that, right now as a total newb trial *****, I'm running Level -18 missions? Or am I confusing ratings and mission levels now?

Yeah, you're confusing quality and level. They are two distinct numbers on the agent, and they're both clearly displayed. Your level in the "Negotiation" skill, as well as your standing with the individual agent, can modify the agent's quality, but their level stays the same.

Every agent has a level. As you improve your standings with an NPC corp/faction you will be able to work for higher level agents. You will need to find the agents yourself as your standings and skills improve as you will not be refered to new agents.
Typically you want to use a frigate for level 1, cruiser for level 2, battlecruiser for level 3, and battleship for level 4. For the newly introduced level 5 missions, you will need a gang of friends.
Higher level missions provide larger rewards and typically have higher bounties on the rats you kill.

OK -- is this when I start a convo with the agent that I'll see this level? Or if I do get info on the agent?

Each agent works for a corporation. You have a certain level of "Standing" with the agent, and its corporation. Standing is important because it determines whether or not you are trustworthy enough to be entrusted with a mission.
Thus, you must start with a Level I (1) agent, and they give you L1 missions. These start you off with weak NPC's and relatively easy missions. As you continue to carry out more and more missions, your "Standing" with the agent as well as the corporation will rise. Corporation standing is important because it modifies your ability to work with other agents.
All but the lowest agents have a standings requirement. You must right click on the agent and "Show Info" to look it up. Once in the info section, look at the "Agent Info" tab and scroll to the bottom. There, it will state the required standing that you will need before you can work for that agent. Again, all but the lowest agents have a standings requirement before they will give you missions.
Agent info will also reveal their "Quality" and their "Level." Level I agents, as mentioned, hand out missions you can complete in a frigate; Level II, Cruisers; Level III, Battlecruisers, and Level IV, Battleships. This is because the higher level agents give you missions that pit you against stronger/more NPC's, and the NPC's get smarter as you move on. Obviously, rewards increase dramatically as you move up in Levels.
Agents with different "Qualities" will give you missions of equal difficulty, but will have better standings increases as Agent Quality goes up. Agent quality is/can be modified by your social skills, and if you are doing missions, you are highly encouraged to train those skills up, specifically, Social, Negotiation, and Connections, because you will notice a big increase in your standings and standings gain.
The Eve Players Guide explains quality thusly:

The sneaky part is that poor quality; level 2 agents give better rewards and faction towards the next level of agent level 3, then any Level 1 good, quality agent, when considering getting to a Level 3 agent of any quality.
so stick with agents of higher quality in the same level to get bigger standings increases, and you will move faster to the next level.

Doh -- just now got home from work and saw the level. Sweet. Good to know, esp. how the levels relate to recommended ship class.
BTW -- what's the Level 5 agent missions gonna require?
