You got like 6 (or better yet, 12 or 24 or whatever) manufacturing alts/friends who manufacture (so they could do 9+ jobs each), had them all make, say, 30 days worth of ammo at Jita IV M4 (it takes a long time to make and is cheap), so no factory slot would be open for the next 35 days (again, better yet 65 or 120). This seems like a prohibitively long time to wait for you to realize your gains on production (so instead of making ravens and selling them in 5 days at 5% profit, you make them and sell them in 35 days at 5% profit, a significant reduction in %/day; 120 days would be unusable).
Would suicide ganker revenue go up, since now more people would make their stuff in other stations and move it around (which people are of course already doing)?
Would the hub actually move to another station? (I would highly doubt this, although if it did that would be pretty cool, you might be able to make some money off people who didn't want to move all of that trit)
Is this not possible to do because of some game mechanic that I'm unaware of?

It is possible to do. You must realize that most of the trade in Jita is imported as well as non manufacture as well as manufactured within a few jumps of Jita so you would have to use up many alts.

If you really want to screw with the market you could prob find better things to produce even. Things that take longer to produce but still don't cost much. only need a single character to do it too. You use up your slots, then cancel all the orders. Then use me up, cancel, etc. Canceled jobs still take up the slots for that time.

I manufacture 18 jumps from Jita.
EVE really has a tremendous transportation infrastructure in place, at least for those adept at using it. I'd estimate no measurable impact from your hypothetical experiment, aside from perhaps ****ing off 3 or 4 random people. If it was executed thoroughly enough to have any real impact, I'm guessing you'd eventually be slapped with a CCP cease and desist order for exploiting a game mechanic, especially if implemented as Shadarle suggests above.

Yeah I figured no significant amount of stuff was produced in Jita. Most of the stuff you probably can't even make in Jita if you wanted to

If you want to know if stuff is made in Jita then check the manufacturing slots. If there are a lot being used then obviously people do use them. If a few are being used then at least some people use them.
If you really wanted to have an impact you'd go 2-3 systems out from Jita, sabotaging them all in this way. And honestly, I don't see why CCP should get involved if you did it. You're spending ISK to do it and it is intentional for the slots to work as they do. This is simply boxing out competitors or opening up piracy lanes or any number of other justifications.
I'd actually be quite mad if CCP stepped in to stop someone from doing this. It actually sounds like something that would be fun to do.
