Just sent back my MSI 8600GT as I was getting graphics corruption, freezing and resetting.
Just got a shiney new ATI Radeon HD 3850. Getting over 200fps in station compared to 60 before.
Brilliant.
Just undocked, fine for 2 mins then computer freezes up, monitors turn off then back on, everything carrys on as normal. Temp was normal at time of freeze.
Sigh.
Got latest drivers etc...

200 fps... impressive and useless. Activate the vsync, so it will just render the useful frames (if your monitor is 100 Hz, half the frames rendered are just useless).
Now, back to your bug : does it crash with the 'classic' content? I had a bugged 7800GT that froze after some time in game just with the premium content (after 30 secs usually). And the card passed the nvidia tests, the tests just switched modes too fast to find the bug (as it needed 30 secs to crash usually). When I replaced the bugged card with a 7950, I had issues before the card eve hit the warning temperature, cooling it a bit more made it work perfectly. In fact, it depends how the air flow is in your case, and how are the heatsinks on the card, the video memory might be cooled badly and there is no sensor for the graphic card memory, only for GPU.
Or you may just be very very unlucky for having two cards from different manufacturers that have some bad parts...
Does the card run fine in other recent games? (my bugged card was freezing in NFS pro street too) -- Pocket drone carriers (tm) enthousiast !

And again. TEMP is your problem. look in Catalist driver i can tell you what temp you will find out when you are running eve. about 70-90C and then pc crashes. My m8 has exact same card and he has exact same problem. I has exact same problem but then with x1900xt card. New cooler did solve me this problem.

Well it just happened again, when I had the fan running @ 90% giving me an underload temp of 40 degrees!
I'm pulling my hair out.
It happens with premium or without

btw the PSU was like ú5, it may be that. how can i find out for sure,
is there a diagnostic program i can run that would determine what is causing the problem?

I am curious, do you run with antialiasing/anisotropic filtering enabled with the Catalyst control center?

The clienting freezing issue is related to all graphic cards, even the old ones, as i'm experiencing it too. It's some client bug at side of texture programming created after 2nd trinity patch Hoping that the fix is yet to come, and fast ...
