Can anyone tell me which folders I need to copy in order to backup my EVE settings. Specifically I want to save my overview settings and bookmark folders, for multiple characters on 2 separate accounts.
Thanks for any info :)

If I knew I would tell you. I'm sick of resetting everything if I crash

Some things simply can't be saved. Overview settings tend to die after each patch.
For the old school, the /Cache folder has everything you need. Under the new system, who knows?

Wow, I'm slightly stunned that this isn't easy to do.
Overview settings in particular are pretty crucial and take a fair amount of time and effort to re-do.
Just another thing to add to list of things that make EVE's the worst UI I've ever used then :/

If you take a copy of the eve folder in my docs, the eve or ccp folder in local settings or application data (hidden folder in your user folder in docs & sets) you should be able to just drop them back in place and it'l work, but if theres a patch or anything then you generally need to redo the settings anyway as they keep adding new ship types which default to not showing on the overview if you use your old settings...

What you want to copy is the settings subfolder in "%USERPROFILE%\Local Settings\Application Data\CCP\EVE" on Windows 2000/XP or "%LOCALAPPDATA%\CCP\EVE" on Windows Vista. Those are some Windows System folders (hidden by default), and simply copying this path into the address bar of the windows explorer should lead you to the correct folder on any system. Copy it out for backup, copy it back for restore. That's it, just keep in mind to do a new backup after every major patch.
