1)How do jump freighters work? Do they require the same fuel as carriers? Can they jump from empire to 0.0 and back? Is there any way for anyone to stop your jump freighter in the middle of a jump and kill you? Is there any certain way to avoid that?
2)If someone leaves a corp, but has assets and jump clones at their stations, what happens to the assets and jump clones?
3)What is "moon mining" EXACTLY? What skills are needed to start?

1. Jump freighters, I would imagine, operate on the same principles as other jump-capable supercapital ships. Yes they require fuel, they can jump across a certain distance (in light-years), and they need a buddy with a smaller ship with a cynosural field generator to fly ahead and affix the arrival point for them by activating the cyno.
2. Depends on what you mean by "has assets". Your gear can either be in your hangar or in a corp hangar where you have access. Your hangar remains your hangar regardless of corp, and you lose access to the corp hangar when you leave. With 0.0 outposts or clone vat ships, you may be able to jump into your clone, but the station will shoot you if you exit with bad standing.
3. Moons in 0.3 and below can have minable resources. You need a POS tower anchored at the moon, and moon harvesters and silos anchored and powered by the tower. You also need POS guns, missiles, and other defenses. Once you set it all up, the POS harvests the materials on its own, and all you have to do is come pick up the results from the silos. To add to Letouk:
1) They can't jump back into empire. They can jump to any system 0.4 or lower with a cyno generator active. They can use the stargates to get back into empire, then jump out again.
2) Your assets in your hangar remain yours. For 0.0 outposts, your medical clone and docking rights can be revoked, but if you have a jump clone you can still pop in and sell your stuff on the market, and make a run for it or wait 24 hours and jump clone back out.
3) Various POS modules require the Anchoring skill to anchor the modules in space. In addition, you must have the appropriate roles and permissions in the corp in order to manage a starbase. If you've never done it before, I highly recommend playing with it on SiSi (test server) before setting your first one up on Tranquility.

Yeah, another way to sell your stuff when you don't have docking rights is to train some of the Trade skills that let you set up remote orders. That way you can do it remotely without having to dock.

This can work, but if it's deep Alliance owned 0.0 space, it can be difficult to even get close enough. In that case it's best to use a jump clone. I still have one in my old alliance conquerable station, but I dare not undock (I'm not blue anymore - I'm not red or disliked, but being not blue is enough to get me popped). I don't even have a ship there anymore, I just pop in every now and then to update orders. I've nearly sold the lot and will destroy the JC soon.
