Well, maybe it's not so great, but I found it fun...
So there I was, roaming around on my own, looking for targets. It was another quiet day, and after around 30 jumps I'd only found 1 target, but I wasn't about to give up yet. I passed through my home system, then carried on right out the other side and kept going. I'm very glad I did!
After a few jumps of more nothing, I spot an Obelisk on scan. I already know he's going to be at a POS, but I decided to see what he's up to anyway. The ship is named after the pilot, so I know he's at least active. Sure enough, I find him at his online POS... But, what's this? After a few minutes of refreshing the scanner, I see a POS module disappear. Is he unanchoring a POS in his Freighter? After a little while longer another module vanishes from 5 degree scan.
I check who else is in local and prepare to warp in on the Freighter, as soon as I see the Forcefield drop. At this point, I'm only thinking about the potential Freighter kill. However, I notice aonther of his Corpmates in a T1 Hauler unanchoring another POS. In fact... After watching them for a good 30 minutes, it seems they're unanchoring at least 5-10 POS. My plans change at this point, and the thought of Large Towers enters my mind...
I make a note of the locations of all the POS being taken down and wait till scanner shows just the Tower, with no Forcefield. I'm in an Onyx, so I have to wait till they leave the POS and move on to another. After maybe an hour and a half, I have around 5 Bookmarks to offline, but still anchored Large Towers. Then, finally, the first Tower begins to unanchor. I log on the Hauler Alt and set him on his way 35 jumps to the system.
With only 30 minutes of the 2 hours offline countdown remaining, disaster strikes when I'm called away from the PC. I'm unable to get back for another 1.5 hours and I know that I've missed my chance. Unbelievably, when I get back and scan the moon, the unanchored Large Tower is still sitting there! I quickly warp in the Hauler, scoop and dock!
Woohoo! 400mil of easy money! The most amusing part was scanning their Hauler at the now empty moon and imagining the look of confusion on his face...
But, that's not the end of the story. The next day I check back on the system twice. The first time, I discover a total of 13 Large Towers offline, but anchored and none of it's owners to be seen. Nothing I can do yet... However, the next time I return in a Falcon to find 5 of the Towers unanchoring, and finishing very soon. Luckily the Hauler is still close, so I get him back on and ready. All the Towers are already bookmarked, so all there is to do is land on top of them and scoop as they come unanchored. 10 minutes before they're due, however, the T1 Hauler form the previous evening shows up, so I know I'm gonna have to be fast. My Hauler picks up 2 Towers before he even shows up. I'm cloaked at the third, and there he is... Missed it. My Hauler goes straight to the fourth, grabs it and makes for the 5th, where I'm now sitting cloaked. The owner shows up at the 4th, then promptly warps out the the 5th. I think he's cottoned on finally... I decloak and lock him. My Hauler lands just behind him and manages to scoop the last Tower before he does.
Bizarrely, he locks both my Falcon and my Hauler. I simply warp both away, dock up the hauler and stare in glee at my 5 free Large Towers.
tl;dr version - I nicked 1.7bil of some poor sod's POS stuff...
I've never been a 'traditional' Pirate. When I'm out, I'm not just looking for the kill, or the ransom... My curiosity often gets the better of me and I 'waste' a lot of time waiting around, gathering information on what's going on around me, even when it usually turns out to be useless. Sometimes, however, it pays off...

Did a similar a short while back...
Followed a hauler in high sec in my covert to a medium pos in he was taking down, bit by bit. He off loaded all the pos periphs to another pos.
While he was away, I manouvered an alt nano transport 200km out and sat cloaked till 3 minutes before the pos came down, warped my transport to 20km from pos of which he was sat right on top of.
3 minutes of furious bumping his t1 hauler resulted in him being 20km from downed pos with his corp mate in a cynabal trying to counter bump me.... To no avail as I scooped the pos and there was diddly squat he could do cept light bit of tightly squeezed sphincter smack.
Only worth 90mill or so but the sad git I am waiting for about 3 hours watching the whole process, icing on the cake as they say.

Did something along these lines in Fade a few weeks back from under the nose of an alliance, was only a small tower but the satisfaction of 100m of free iskies and a ****ed off 0.0 alliance was a pure rush ...

I watched him for about 12 hours straight waiting for him to start offlining even one POS but I guess I just had a bad timing

so how do you check for POS status..i.e. whether its offline, when its due to un-anchor etc?

The easiest way to check whether a tower is offline without warping to it, is using the directional scanner (CTRL+F11). If you see a tower near a moon but no force field, you know it is offline. And when a tower (or any pos module) is unanchoring, a timer appears below the icon in space.

Pretty much this. Add Towers and Forcefields to your overview. When you enter a new system, you can also do an initial 360, max range scan and count the Towers, compared to Forcefields.
