Suppose I want to run EVE on Linux (Ubuntu), but the OS will be on a bootable CD in a RAM-only machine.
So no HDD, volatile memory only.
Is it possible to install a compatible EVE client version onto a USB key or similar and play it that way?
Any other workaround? It has to be portable and not reliant on magnetic storage.

You should be able to run the classic client on a 1GB USB flash drive if you clear out the cache. Although for best results you're probebly better off with a 2GB Flash drive or higher. _______________

Won't work.
Not because the previous commenter was wrong, he wasn't.
Because Ubuntu Live CD's only load a GPL'ed video driver that cannot do 3D processing. In order to run EVE you need 3D capability. In order to get that you need the proprietary video drivers for either your Nvidia or ATI card.
These cannot be loaded until AFTER a normal installation is completed, at which point Ubuntu will prompt you to download and install the proprietary drivers using it's automated driver manager tool.
Sorry, you will need some kind of hard drive to load the OS onto if you want to play EVE, or any other 3D game. Tactical Logistics using the last T1 Frigate hull!

or install the whole thing (OS and Eve) onto a bootable USB stick, there are howto's out there on what to do to achieve this.

Well, if your boss doesn't catch you, probably the IT guy will (unless you are that IT guy, of course,) so a bad idea indeed. (just kidding)
Search the forums, I think I saw a thread from someone asking something similar (but maybe it was about running Eve from a USB flash drive in XP. I can't remember now.) ----

Oh how wrong you are.
You can easily make a ramdrive from the bootcd, then download drivers from NVIDIA, then alter the X config... After that - modprobe nvidia and voila ;)
Not that it's very useful to do a such thing, but your "cannot" was very wrong.
