Ok been in a few roaming fleets now, but I have a question.. what does the term "point" mean ? Does it simply mean you have a lock on the enemy? or is it more then that ?

I means someone has a lock AND a point of Warp Scramble strength/mod on them. In other words a tackler has someone under the effect of a warp disruption mod of some type which means they can't warp away.

"Point" typically refers to getting a "point" warp disruption on a target.
The term is probably used loosely by some folks for warp scramble and web in general. If used precisely, a ship with a two point strength Warp Scrambler would announce "two points" when successfully getting his scrambler active on a target.

ah ok, that makes sense since more then one guy was announcing "point", so the more points on the enemy, the less chance he has, if any, to warp off.

Every ship has a Warp Strength statistic, as long as it is positive, you can warp. Most ships have a strength of 1, Transports (Tech 2 Industrials) have a ship-based bonus that gives them extra points in that stat.
A Warp Disruptor module reduces the warp strength of the targeted ship by -1, so that if you are being affected by this module your strength drops to 0 and you cannot warp. Someone has taken a "point" off your warp strength and trapped you there to die. Welcome to EVE.
When you have someone warp disrupted, you tell your FC that you have a point on them so he knows they are not going to warp away. DO NOT confuse your FC or let your target get away by calling "point" when you use a Stasis Webifier instead of a Warp Disruptor. A Webifier will not prevent them from warping, in point of fact it will allow them to align and warp faster UNLESS you also have a Warp Disruptor on them. If this happens everyone will laugh at you and your target will laugh at you and you will feel bad. Welcome to EVE.
There is also a module that can increase the warp strength of your own ship, it is called a Warp Core Stabilizer. If you have someone pointed and they still warp away (unless they are in a Transport), they are using a WCS. It is for cowards and farmers, and in addition to the fact that it will cut your lock range and time roughly in half, it will make people hate you even more than if you fail to tackle something for your gang. Your children will probably grow up to loathe you, Subway will not hire you when your boss finds out about your Warp Core Stabilizers and fires you, this is the fate that awaits all WCS users.
