Ive just started getting into exploration and read that you cant/shouldnt overlap probes. I have accidentally overlapped a couple of probes and it didnt stop me doing a scan but got no result anyway. Does overlapping trash the scan altogether or does it simply reduce the effectiveness of the scan

Overlapping probes actually increases their effectiveness. I forget the exact equation, and it involves signal strength and distance from the probes anyway.
What people are intending to say when they said "you can't overlap probes" is that you can't launch a probe from within another probe's area. So for example if you're launching Quests, each Quest must be more than 4.0 AU apart from each other (even if it's 4.0001 AU like I've pulled off before). ---

Woo Hoo, it worked, found my first deadspace pocket right in my home system. Small drone one.

Not to ruin the party or anything, but in the scanner did you have "cosmic anomaly" or "cosmic signature" (or both?) selected? You see, to find the escalating deadspaces, hacking sites, arch/sal sites and hidden belts you need to scan for cosmic signatures only!
Cosmic anomalies are those little deadspaces you can find with the on-board scanner in just about every system (sorta like "ratting with a twist").
If you'd like to see a pro do it, there's a very good vid on Youtube, here's the link. It's a bit outdated (difference between cosmic signature and anomaly didn't exist back then in scanner) but it shows how to best set up your scans.

also, use eve-search.com to find "Exploration Guide 2.0"
Very good guide and explains just about everything a newbie needs to know.

It was Cosmic Signature and it was a 2 part event, first part in the system then another small scrap 6 jumps away.
