I launch EVE, but the game doesn't play. The login screen does not come up.
I think I ran out of disk space during patch.
How do I fix?

Delete some files from your hard disk and reinstall EvE from scratch.
Remember that you really really should keep some space free on the disk. Not only any disk that is more than about 75% full becomes several times slower, but the Apple file system has serious problems in handling full disks and you risk a corrupted file system.
As a rule of thumb you should avoid having disks more than 80% full.

I am used to installers telling me if there is not enough disk space for installation.
It seems there must be a combination of files I can delete or edit to get it to download patch again.
* I deleted EVE and am downloaded installer on a very fasy connection, but am only getting 30k/sec. It is going to take 7 hours!!! *

Yes, they should. But things are different when you have no installer (most Apple applications do not need an installer) and for Patchers.
Some patchers can do dynamic patching, meaning that the actual needed disk space is not known in advance. So they do not do it. This is not the case for EvE as the patcher is not dynamic, but it still does not make the check.
Also note that keeping your disk below 80% has nothing to do with "disk full" errors. It's a good habit that helps in three specific areas: 1) reduces fragmentation, therefore making any disk activity more responsive 2) the inner 25% of the disk surface is intrinsically much slower than the rest. Especially the last 5-10% 3) know apple file system instability when the disk has less than 10-15% space free (you risk loosing the whole disk)

Well ... it's not good to download it right after a patch. What I do is I always keep the last installer around (I download it about a week after a patch, including minor patches). If you have it, reinstall the client and let it re-patch itself (the patch file should still be in your cache, unless you cleared it, therefore it will not download again). I also copy out the patch file from the cache after patching (especially if I'm going to clear the cache, which I do).

I must say I do smile to the idea that the patch had a disk space checker and thus we are now having problems with disk space :D There have been a lot of "we fixed this...oh shi....we didn't fix it....oh shi...we made it even worse!" moments.
Feels like the "mac" devs aren't allowed on SiSi to test anything :) "Go with blind faith my friends!"
