Is this true?
Im failing to find an easier process of joining a corp...Scrolling through the list of corporations is extremely sensitive when there are 1000s in the list.

First, look at the list of offices not HQ's. The former is limited to dozen's instead of hundreds.
Second, look in less crowded stations. The lists there are even shorter.

Third, ask the recruiter for the corp you're interested in where they have an office and go there.

I'm not sure exactly what you are considering here. There are two distinct stages in joining a new corp:
1) Finding/deciding on a corporation to join. 2) Going through the game mechanics required to become a member of that corporation.
You are right that for part 2, the only way that you can become a member of a corporation is to dock at a station where that corporation has an office/HQ, and click the "Apply" button. However, given the wording of your question I suspect you may be using this as a way to browse what corporations are available as a prelude to choosing one.
If you want to choose a corporation to join, there are many avenues to this, including:- Read the recruitment forum
- Join the recruitment channel in-game
- Use the Corporation interface to search for corps advertising for pilots fitting your criteria
- Get chatted up in-game
- See a corp you like and approach their contact asking about membership
- Heck, even see a can anchored near a station/stargate advertising recruitment opportunities...
EVE is a social game, and since a corporation (especially in high-sec) is primarily a social entity, there are as many way to get introduced to one as there are ways of running one.

Im assuming the person already has chosen the corporation and needs to join. I was wondering if there is more than one way of joining because new players get extremely confused on manually finding that "apply" button.
The CEO/Director has to explain to each pilot how to do this. Isnt there a /corp invite name function like every other mmorpg?
Or an EVEmail that you can send that will allow the person to accept from their inbox?

Yes thats the only way. It can be done at any corp office/HQ that they have as well.
I don't think I've ever been in a station that has "1000s of corporations" having HQs there.
If the corp is question has any 10K offices, you could probably go there and have a much smaller list.

No, they need to fly to one of your offices to put in their application.
If it's proving troublesome for them, renting offices in much quieter stations will possibly help.

Consider it a test of basic eve knowledge - If you send them the details of where and how to apply and they cannot do you really want them in your corp?
