Edited by: Sturdy Girl on 03/02/2009 12:05:59 Eve currently has NO proper multi-monitor support.
Any Eve client running in fullscreen will choose your primary display, so 2 clients running fullscreen will render over the top of each other (not particularly handy).
Additionally, any fullscreen client will minimise itself if it loses focus, so you can't just move the mouse over to a second windowed client instance to do stuff there, and then quickly move back to the fullscreen client.
So, you need to run 2 windowed clients, and fit them to your monitors as you see fit. Note, having a window spanning multiple monitors is a bad idea (tends to lower FPS) so ensure your windows fit within one screen.

Does it stop it minimising when you switch? |

I use shiftwindow. There's Evelauncher too if you'd rather, but I actually like shiftwindow better.
Fire up first Eve client on monitor one (windowed), open shiftwindow, "grab" Eve client with "monitor one" setting checked, and shiftwindow evens it across the screen so you get better framerates.
Fire up second client and drag it to monitor two (windowed), drag shiftwindow to second monitor, "grab" Eve client with "monitor two" setting checked, and shiftwindow evens it across the second screen for better framerates.
Now both clients are up and you can switch back and forth controlling them freely. I have run up to five clients this way (and maybe even a 6th here or there) and routinely run three to four at once.
We women are great multitaskers.
