If you require proof for everything, I don't see how you can believe in anything.
Evidence? Yes. Proof? There's never enough.
I prefer the scientific approach. Nothing can be proven for absolute certain, but a theory which has significant predictive power and no counter evidence can be accepted as true until such time as it is shown to be false or lacking.
That predictive ability is what sets apart ideas which are proven in the non-absolute sense and mere beliefs. Even if they can never prove anything for certain, they allow us to ascribe a structure to our perceptions, structures which usually hold true in a limited context even after they are show to cease to function in a greater context. -

Does everyone need to wait for the high priests of the scientific community to prove or disprove something in order to believe something? Of course not. Many people gather data every day, and form, tear down, and rebuild their beliefs in things every day... some are minor, some are major beliefs. Some people don't and live their life on autopilot.
I didn't mean to imply that science can or should try to explain everything, merely that with the right method we can manage more than beliefs for at most things. As for the rest, that as you say is up to the individual. -
